Tempting salad

In Thailand, the bird is stretched on bamboo sticks and roasted on a spit. We’ll do it a little easier. Whisk with a blender 2-3 stalks of lemongrass, roots from a bunch of parsley, a head of garlic and ½ tsp pepper peas. Add lime juice, a pinch of salt, and 1 tbsp each of sweet and light soy sauce. Soups are the hallmark of Thai cuisine. Perhaps the most popular of them is “Tom Yam.” Cut into slices 15-20 cm of galangal root (ginger) and 3-4 stems of lemongrass, pour water and cook for 7 minutes. Add 400 g of champignons in plates, 3 tomatoes and onion cubes, 2 tsp. chili sauce and cook for 10 minutes. Next, we lay 300 g of peeled shrimp and keep the soup on the fire for another 5 minutes. Now pour in the lime juice and put 3-4 leaves of Kaffir lime — this will give the dish a thin citrus bitterness. The leaves can be removed at the end. Add 400 ml of coconut milk and let the soup boil. Serve it with rice and fresh herbs.
The attraction of soup
Another soup hit of Thai cuisine — “Tom Kha Kai.” Cut into strips 300 g shiitake mushrooms and pour boiling water. Bring to a boil 1 liter of chicken broth, lower the stem of lemongrass and 2 roots of galangal (ginger), cut into circles. Pour out 2 tablespoons of brown sugar, 4-5 Kaffir lime leaves, simmer the broth for 5 minutes. Add 5-6 chili peppers in rings, 600 ml of coconut milk and 6 tbsp of fish sauce. Fry in a frying pan 300 g of chicken breast slices with swollen shiitake, a handful of eggplant, carrots and onions. Put this mixture in the soup, pour in the lime juice and cover with a lid. Wonderful aromas will quickly gather the whole family at the table.

All drinks Thais prefer tea “Cha Yen“, which they are ready to drink always and everywhere. Mix in a saucepan 2 tablespoons of green tea, a stick of cinnamon, 2-3 clove buds, 2 stars of anise, vanilla on the tip of a knife. Fill them with a liter of boiling water and simmer on low heat for 5 minutes. Add 1 tsp of orange water or syrup. For a deeper color, add 1 tsp of hibiscus. Let the tea brew, filter and put the cane sugar to taste. For sweetmeats, you can replace it with condensed milk. In summer, this tea is served with ice in a tall glass. And in the fall, you can drink it hot, garnished with whipped cream with ground cinnamon.
