If the north of Spain is characterized by something, it is for its beautiful views and delicious dishes. For this reason, we previously published an article in which we presented two of the many typical dishes typical of the Autonomous Communities that make up the north of Spain.
However, as there are many other dishes that you should not stop trying if you visit the north of the country, we have decided to publish a second post in which you can learn about two other exquisite dishes that are easy to find in any restaurant in northern Spain.
We present these delicious dishes to you, below, and do not hesitate to visit the first post on the essential gastronomy of the communities of Galicia, Asturias, Cantabria or the Basque Country, to learn more about typical dishes from these areas.
The gastronomy of Galicia
If in the previous publication we opted for the octopus and the Galician broth, this time the pork shoulder with turnip greens and the Galician pie are the chosen dishes.
Lacon with turnip tops
This plate It is commonly consumed in Galicia during the winter months, and it is a stew whose main ingredients are the beaten ham, turnip greens, potatoes, chorizo, paprika and olive oil, to which the cooking broth and sprinkled paprika are usually added.
Galician pie
Generally prepared with tuna, peppers and onion, although cod empanadas with raisins or octopus are also typical. Its dough is very similar to that of bread and ingredients such as eggs are usually added, in addition to flour, lard, yeast, white wine, olive oil, water and salt for its preparation.
The gastronomy of Asturias
As we have already explained, Asturian gastronomy is characterized mainly by its excellent cattle and their fish of great quality. This time we wanted to refer to Asturian cheese as one of the most typical dishes of the place.
Chorizo with cider
Once you have tasted the cachopo, the chorizo with cider is one of the dishes that you cannot stop trying, although you should make room in your stomach, since it is an abundant chorizo (usually large) prepared with cider, and accompanied with bread to dip the sauce.
Asturian cheeses
The second dish that we present today is Asturian cheese, one of the best known in the national territory. Some of the most valued are the Cabrales cheese, you’ve probably heard of, or Afuega’l Pitu, La Peral, Gamonéu or Vidiago cheeses.
The gastronomy of Cantabria
We put aside the mountain stew and the anchovies, and we focus on two dishes that you have probably already tried; squid and Cantabrian cheese.
The squids
They are squid a la Romana, although in Cantabria they are called rabas. And the truth is that its flavor leaves no one indifferent, being one of the most valued starters. Our recommendation is to accompany the squid with a glass of wine or a beer.
Cantabrian cheeses
If you cannot leave Asturias without having tried the famous Cabrales cheese, you cannot say goodbye to Cantabria without first having tried another of the most valued cheeses in Spanish gastronomy.
In this case we find three types of denominations; the cream cheese, the quesucos from the Liébana Valley and the Bejes-Tresviso cheese. The latter is the strongest of the three, so it is not suitable for all palates.
The gastronomy of the Basque Country
We finish with the gastronomy of the Basque Country, where you should try one of the two dishes that we present below, if not both. If we previously proposed you to try the marmitako and the crab, this time we could not ignore the cod al pil-pil and the squid in their ink.
Bacalao al pil-pil
Its name comes from the sound that the sauce makes during preparation, and it is about one of the most traditional dishes of Basque cuisine. Its ingredients are cod, olive oil, garlic and chillies.
Baby squids in their ink
We finish with squid in its ink, another of the most typical dishes of the place. Its main ingredients are pepper, onion and squid ink, although it is true that there are different forms of preparation.
