In the pan, add orange juice and a little honey at the end of cooking for a sweet / savory recipe. Ideal to accompany a duck breast.
In velvety. We mix endives and potatoes for a pepsy soup.
In gratin. In the traditional recipe, a slice of ham is wrapped around the endive, then it is coated with a béchamel sauce. We innovate by replacing ham with smoked salmon.

Pro tips
Choose well : endives must be firm with tight leaves and unblemished. The base should be as white as possible. red endives are sweeter than white ones.
Conservation : by wrapping them in absorbent paper, they will keep for up to 6 days in the vegetable drawer of the refrigerator. It is better to avoid keeping them in full light as this makes them green and become more bitter.
Baking : steamed, they cook for about ten minutes. In the microwave, 5 minutes is enough. For melting or crunchy endives, they can be pan-fried for about fifteen minutes. In the gratin version, they cook in the oven for about twenty minutes.
Did you know ? To remove the bitterness from raw endives, you have to remove the equivalent of a small cone at the base. When they are cooked, sugar or honey is added during cooking.
