Hot and cold appetizers are usually served before the main course. But they can also serve as a light snack, breakfast or dinner. The assortment of snacks is very extensive: all kinds of salads, pates, stuffed and pickled vegetables, snack pies and tartlets, as well as rolls made from eggplant with vegetable, mushroom and meat fillings.

Eggplant rolls with tomatoes, feta cheese and olives

To prepare eggplant rolls with feta cheese, olives and tomatoes, you will need:

– 300 g eggplants; – 3 tomatoes; – 1 clove of garlic; – 80 g feta cheese; – 1 tbsp. mayonnaise; – pitted olives; – 1 tbsp. l. olive oil; – salt.

Wash the eggplants and cut them lengthwise into strips about 0,5 cm thick. Then place them in a bowl of cold salted water. After 15–20 minutes, remove the eggplants from the water, dry and fry on both sides in olive oil. Peel the clove of garlic and pass it through a press, wash the tomatoes and cut into slices, and the feta cheese into small cubes.

Grease the strips of eggplant with mayonnaise, put on each circle of tomatoes, a little garlic and wrap the eggplant in the form of rolls.

Put on the skewers one olive and a cube of feta cheese, then pierce the rolls with the skewers, arrange them beautifully on a platter and serve.

Eggplant rolls with nuts, carrots, beans and pork

To make eggplant rolls with carrots, nuts, beans and meat, you need to take:

– 1 kg of pork; – 1 kg of eggplant; – 300 g of beans; – 200 g of bell peppers; – 200 g of walnut kernels; – 50 g of lard; – 2 medium-sized carrots; – 1 head of garlic; – a bunch of greens; – a pinch ground cinnamon; – 2 cloves; – ground pepper; – salt.

Wash the eggplants, boil in salted water, cool, then peel and cut into thin slices. Bell peppers (it is better to take red) wash and cut into small cubes, wash the carrots, peel and grate, boil the beans beforehand (you can use canned beans, ready to eat) and chop finely. Chop the washed greens and peeled garlic with a knife. Combine all ingredients, add spices and mix well.

If you make the filling for the rolls purely vegetable, they can be served as a side dish with a meat dish.

Wash the pork, dry with a paper towel and, cut into small cubes, fry in a pan with lard until half cooked. Then add to the prepared vegetable mixture.

Spread small portions of the minced meat in the middle of each layer of eggplant, roll them into rolls and stab with a wooden skewer or toothpick. Wrap the eggplant rolls in foil, transfer to a baking sheet and place in an oven preheated to 220 ° C for 20 minutes.
