Next, we cut 150 g of champignons into wide plates, fry them together with the chicken. Pour all the sauce from 250 g of natural yogurt, 2 tbsp. l. Dijon mustard, 2 tsp. lemon juice, herbs of Provence and salt to taste. Cover the pan with a lid and simmer its contents over low heat for 30 minutes. Before serving, garnish the fragrant fillet with mushrooms with fresh herbs.
Vegetable extravaganza in the oven
A light vegetable casserole is what the body needs instead of another portion of olivier. We divide into small inflorescences of 300 g of broccoli and cauliflower. We chop the carrots with thick curly washers. Blanch the vegetables in boiling unsalted water for 5-6 minutes. Also peel the zucchini and cut into large pieces. We put all the vegetables in a greased baking dish, salt and pepper to taste, season with olive oil and mix well. Sprinkle them with crumbled feta on top and send them to the oven at 180 °C for half an hour. Let the vegetable casserole cool down a little, garnish with arugula leaves — and you can serve it to the table. As a sauce, put low-fat sour cream or Greek yogurt next to it.
Kebabs for sea gourmets
New Year’s holidays are not complete without delicious fish dishes. It will not be difficult to add benefits to them. The signature recipe of baked red fish in the form of kebabs will easily convince you of this.
Cut 800 g of salmon fillet into large cubes, rub with salt and black pepper, sprinkle with olive oil and lemon juice and marinate for 20-30 minutes. We string the skewers on wooden skewers, alternating with slices of Bulgarian pepper and rings of purple onion. It is better to soak the skewers in cold water in advance so that they do not burn. We put the skewers in a baking dish, covered with baking paper, and bake at 200 °C for 10-15 minutes.
Serve the fish skewers hot with yogurt sauce. To do this, mix 150 g of unsweetened yogurt, grated cucumber without peel, crushed garlic clove, juice of half a lemon, a pinch of oregano, salt and pepper to taste.
Vitamin assortment and a little quinoa
It is very simple to make a recipe for a light salad satisfying and at the same time not to lose useful qualities. Add the cooked quinoa grits to the fresh vegetables. Pour 100 g of quinoa 250 ml of cold water, bring to a boil, add salt and cook until ready. Then we throw it into a colander and let the water drain completely.
While the cereal is being prepared, we cut a small fresh tomato, cucumber, red and yellow bell pepper into neat slices. As small as possible, we chop half of a small bunch of parsley. Combine quinoa, chopped fresh vegetables and herbs in a salad bowl, season with olive oil and 1 tbsp. l. lime juice, mix thoroughly. Be sure to serve the salad warm, garnished with parsley petals.
Fruits in juicy greens
Here is another recipe for a light salad, which organically combines fruits and fresh herbs. A real find for those who strictly follow the figure, even during the holidays. We wash 70 g of chard leaves in water and dry them well with a paper towel. We remove the bone from the avocado, peel it and chop the oily pulp into large slices. Peel the orange, divide it into slices and carefully remove the white films. The dressing for our salad is mixed with 2 tbsp. l. olive oil, 1 tsp. soy sauce and 1 tsp. balsamic vinegar. Combine avocado, orange and chard leaves in a salad bowl, season with sauce and sprinkle with white sesame seeds. Satisfying, original and low-calorie.
The first dish of the year
On holidays, few people remember about the first dishes. And completely in vain. A light soup with chicken, mushrooms and pearl barley will only benefit the body. Soak 150 g of pearl barley for 1.5-2 hours. Then fill it with 500 ml of fresh cold water and cook until ready.
Cut a small onion into cubes, carrots and 2 stalks of celery-slices. Lightly fry the vegetables in a saucepan with vegetable oil. Add 300 g of chicken fillet in pieces and 150 g of champignons in plates. We continue to fry them with vegetables for another 5-6 minutes. Then pour 2.5 liters of hot water or vegetable broth into a saucepan, lay the boiled pearl barley and bring the soup to readiness. At the end, salt and pepper the soup to taste, put the bay leaf and let it brew under the lid for a while.
Omelet as a holiday
A festive breakfast can and should be easy and healthy. Omelet with broccoli, tomatoes and chili peppers is just such a case. We divide 100 g of broccoli into inflorescences, lower it into boiling water for 5 minutes, throw it into a colander. Carefully remove the seeds and partitions from the chili pepper, chop the pulp with rings. A fleshy tomato of medium size is cut into slices.
Beat 4 eggs with a whisk, add 60 ml of milk, a pinch of salt and pepper. Pour the egg mass into a well-heated frying pan with oil and, before it has time to grab, spread the broccoli, chili rings and tomato slices mixed together. Cover the pan with a lid and fry the omelet until golden brown. Serve it directly in the pan — it will be even tastier this way.
