Eastern sweets: making an Oriental pie. Video
Eastern sweets are called confectionery products of Turkish, Central Asian and Transcaucasian cuisines. In the recipes of oriental delicacies, candied fruits, nuts, raisins, sesame seeds, honey, as well as various spices are widely used: vanilla, licorice, ginger, cinnamon. The preparation of these sweets often requires special skills and equipment, but you can make a simple Oriental pie at home, which tastes very much like baklava, a Turkish dish.

Pie dough recipe “Eastern”
This pie or cake tastes very much like oriental sweets. To prepare this dish, a deep shape is needed, since the cake is baked from several cakes, and each one is filled with filling, and you will also need the following products:
– 150 grams of butter or margarine; – 150 grams of sour cream; – 2 eggs; – 1 glass of granulated sugar; – ½ teaspoon of baking soda; – 2,5-3 cups of flour;
– 1 glass of shelled walnuts; – 1 teaspoon of cinnamon; – vanillin; – 1 glass of dried apricots, prunes, raisins (mixed or separately).
Thoroughly grind the eggs with granulated sugar and, continuing to grind, add soft margarine or butter. Then add sour cream, soda, vanillin, mix everything together until smooth and add 2 cups of wheat flour. Add the rest of the flour gradually, one tablespoon at a time, kneading the dough well. It should be soft.
Divide the cooked oriental pie dough into 5 pieces. One of them, for the bottom cake, should be larger than 4 others.
Pie “Oriental”: layer for cakes and baking
Next, prepare a layer of cake layers. To do this, chop the peeled walnuts with a knife or crush them in a mortar. Soak dried apricots, prunes and raisins (pitted) in hot water. When the dried fruits are steamed and soft, remove the seeds from the dried apricots and prunes. Dry the berries with a napkin and cut into small pieces.
Instead of dried fruit, you can use candied jam fruits and berries for the layer of the pie. Best suited for this are pitted apricots and cherries.
Mix the cinnamon with a little granulated sugar. Roll out the largest part of the dough into a round layer just large enough to cover the bottom and sides of the mold.
Grease the pan very thickly with margarine. Transfer the prepared dough layer into it. Place ¼ part of chopped nuts evenly on it, sprinkle with a mixture of cinnamon and sugar. Cover with a second rolled out layer of dough equal to the size of the bottom of the mold, spread the mixture of dried apricots, prunes and raisins on it. Sprinkle with ¼ part of the nuts and cinnamon and sugar on top.
If the mold is non-stick, cut very carefully, being careful not to scratch the coating with the knife.
Lay all subsequent cakes in the same way, except for the last one. Connect the edges of the last dough cake with the edges of the lower one. Blind them the way dumplings are molded. Sprinkle the surface of the cake with a mixture of cinnamon and sugar and cut the cake raw into rectangular or diamond portions.
Preheat the oven to 200 degrees and place the baking dish in it for 20-30 minutes to bake. Check the readiness of the Eastern pie with a match or a splinter. Poke it through the dough, and if it stays dry, the cake is ready.
