E471 Mono-and diglycerides of fatty acids (E471)
The name mono-and diglycerides of fatty acids speaks for itself, these are substances derived from vegetable or glycerol-derived fatty acids. They belong to the group of food additives-stabilizers, thickeners and emulsifiers, in the international classification of mono – and diglycerides of fatty acids assigned the index E471.
General Characteristics of E471 Mono – and diglycerides of fatty acids

Saturated fatty acids produce mono-and diglycerides in the form of solid powders, granules or flakes of a white-cream color that do not have an odor. Glycerides of unsaturated fatty acids are liquids of an oily consistency, the color of which can be either yellow or brown. Both forms of glycerides have the property of dissolving in benzene and ethyl alcohol, but are insoluble in water. The main purpose of mono-and diglycerides is to mix substances that cannot be mixed under normal conditions (for example, water and vegetable oils).
Benefits and harms of E471
The human body perceives glycerides as any other fats, the process of processing these substances does not differ from others. Mono-and diglycerides are not particularly useful, the only advantage of these substances is their hypoallergenic nature. Given the fact that the food supplement E471 increases the caloric content of the products in which it is contained, you should not get carried away with excessive use of this type of products for those who are prone to obesity, people with liver and biliary tract diseases. To date, the permissible daily intake of E471 has not been officially established.
Application of E471 Mono-and diglycerides of fatty acids
In the food industry, E471 is used as a stabilizer, a substance that preserves and improves the level of consistency and viscosity of products. E471 is used in the production of mayonnaise, margarine, dairy and fermented milk products, ice cream, cottage cheese creams, food additives contain crackers,cookies and crackers. In addition to the food industry, E471 mono-and diglycerides of fatty acids are used in agriculture (animal feed) and cosmetology (fat-based creams).
