Cyclodextrins are carbohydrates, cyclic glucose oligomers obtained enzymatically from starch.
All cyclodextrins are white crystalline powders, non-toxic, practically tasteless. Externally, they are white crystalline and amorphous substances. The amount of crystallization water varies from 1 to 18%, depending on the methods of drying and preparation of the preparation.
Cyclodextrins are distinguished by the amount of glucose residues contained in one of their molecules:
- α-cyclodextrin-consists of 6 glucopyranose units;
- β-cyclodextrin-consists of 7 links;
- γ-cyclodextrin-consists of 8 units.
Cyclodextrins are widely used in food technologies, pharmaceuticals, cosmetics, biotechnology, analytical chemistry, and have good prospects for use in the textile industry, in water purification processes, and in oil production.
