Pyrophosphates are salts and esters of pyrophosphoric acid used as a food additive-stabilizer. In the international classification of food additives, pyrophosphates are assigned the code E450.

General Characteristics of Pyrophosphates

Pyrophosphates (diphosphates) are small white powder or granules, have no smell, but differ in a specific taste. Substances exhibit the properties of a stabilizer that preserves the viscosity of products, are used as an acidity regulator, moisture-retaining agents, color fixators.

Harm Of Pyrophosphates

The main danger of eating foods containing E450 is the occurrence of a serious imbalance of calcium and phosphorus in the human body (calorizator). Excessive intake of phosphorus with a dietary supplement slows down the absorption of calcium, which increases the risk of developing osteoporosis. Pyrophosphates (diphosphates) are a substance that affects the increase in cholesterol levels in the blood.

Application of Pyro-and Diphosphates

The food industry uses E450 in the production of cheeses, dairy products and canned meat and semi-finished products. Due to the ability of E450 to increase muscle tissue, the food additive is often used in the preparation of minced meat to increase the volume of finished products. E450 is also used in medicine, in the production of detergents for washing various surfaces, as an additive for drilling fluids.

On the territory of our country, the use of Pyrophosphates (diphosphates) as a food additive is allowed, the norms are defined by the Sanitary Rules of the Russian Federation.
