Calcium Lactate (Calcium Lactate, calcium lactic acid, E327) is the calcium salt of lactic acid.
Chemical formula 2 (C3H5O3· * Ca. The powder is white, almost odorless. Slowly soluble in cold water, well soluble in hot water. Practically insoluble in ethanol.
It is used in the food industry as a food additive E327 as an acidity regulator, a moisture-retaining agent, an emulsifying salt, and an antioxidant synergist.
Calcium lactate is highly soluble and easily absorbed without irritating the gastric mucosa, so it is a good calcium donor and is used to enrich, for example, fruit juices. The calcium content in lactate is higher than in gluconate.
Calcium lactate is used as a food for yeast in bakery products and as a hardener for fruit (in canned food), as well as as a substitute for table salt, a synergist of antioxidants.
