Potassium Lactate (Potassium Lactate, potassium lactic acid, E326) is the potassium salt of lactic acid.
Chemical formula CH3CH (OH)COOK. It exists only in the form of solutions (no more than 60%). It is well soluble in water and alcohols.
It is used in the food industry as a food additive E326 as an acidity regulator, a moisture-retaining agent, an emulsifying salt, and an antioxidant synergist.
Potassium lactate is used as a substitute for table salt, as a sealer of plant tissues in the processing of fruits and vegetables. Its antioxidant properties allow it to be used together with other antioxidants in frozen products with a long shelf life to prevent oxidative spoilage of fats.
