E325 Sodium Lactate

Sodium Lactate (Sodium Lactate, sodium lactic acid, E325)

Sodium lactate is the sodium salt of lactic acid, which has the chemical formula C3H5NaO3. The substance is registered as a food additive-an antioxidant and an acidity regulator, as well as a moisture-retaining agent (calorizator). In the international classification, Sodium lactate has an index of E325.

General Characteristics of Sodium Lactate

Sodium lactate is a powdered white crystal, but is more commonly known as a syrupy viscous liquid of light brown color, well soluble in water. The process of obtaining E325 is the neutralization of lactic acid formed during the fermentation of sugar-containing products.

Benefits and harms of Sodium Lactate

Sodium lactate can be produced in the human body by intestinal bacteria naturally. Milk protein in E325 is absent, so products containing sodium lactate can be consumed by those who suffer from lactose intolerance. The daily intake of E325 is not established, but the substance is not recommended for baby food, because the child’s body does not have enough liver enzymes.

Application of E325

E325 is a strong preservative that extends the shelf life of food products and improves their organoleptic properties. In its composition, sodium lactate has meat products in vacuum packaging, especially frozen, bakery products, liqueurs, creams, brines. As a moisture-retaining agent, E325 does not allow the products to dry out.

In addition to the food industry, Sodium lactate is used in the production of shampoos and liquid soaps, medicines.

Use of E325

On the territory of our country, it is allowed to use the food additive Sodium Lactate as a preservative and water-binding additive.
