E141 Copper complexes of chlorophylls and chlorophyllins

Copper complexes of chlorophylls and chlorophyll (Chlorophyll copper complex, E141) — natural green colorants, mainly used in the dairy industry.

There are 2 types:

  • Chlorophyll copper complex);
  • Copper complex of chlorophyllin sodium and potassium salts (Chlorophyllin copper complex, sodium and potassium salts).

They are presented in a water-soluble form and are used to give products bright green shades.

Chlorophyllin gives the best results in products with neutral and alkaline levels of acidity. It has good heat resistance.

Copper complexes of chlorophylls and chlorophyllins are used in the production of ice cream and various dairy desserts.

Modified chlorophyll: magnesium is replaced with copper.
