Proteases (E1101) are enzymes from the class of hydrolases that break down the peptide bond between amino acids in proteins.
The group includes:
- (i) protease);
- (ii) papain);
- (iii) bromelain);
- (iv) ficin.
It is used as a flour and bread improver, stabilizer, meat and fish maturation accelerator, flavor and aroma enhancer.
The additive was excluded from the list of “Food additives for food production” to the Sanitary and Epidemiological Rules and Regulations (SanPiN 2.3.2.2364-08) in 2008.
