Tartrazine is a fine powder, granules or solution, colored yellow. It is produced by processing coal tar, which is a waste product from coal mining. The substance is perfectly soluble in water, when interacting with direct sunlight, it disintegrates, so you need to store E102 in a tightly closed container, the walls of which do not allow light to pass (calorizator).
Tartrazine is one of the cheapest dyes obtained synthetically, this is due to its widespread use, often to the detriment of human health.
The use of Tartrazine
The E102 supplement is of synthetic origin and there is currently no scientific data on the benefits of tartrazine.
Harm of E102
Tartrazine has a high degree of allergenicity, with its uncontrolled entry into the human body, severe urticaria occurs. The use of E102 by children leads to a deterioration in brain activity, a decrease in attentiveness against the background of hyperactivity. In rare cases, the appearance of Quincke’s edema and Merkelsson-Rosenthal syndrome, which is characterized by cracks in the tongue and paralysis of the facial nerve, are noted.

Application of E102 Tartrazine
The main application of the E102 additive is found in the food industry, because not only does it itself color products in a bright yellow positive color, it can be used to create a variety of color shades, because Tartrazine mixes perfectly with other food dyes.
The substance is used for the production of ice cream, cakes and pastries, jellies and jams, canned vegetables, fruits and berries, yoghurts, purees and instant soups. It is often used in various carbonated drinks (Mountain Dew, Tarragon, Tonic, etc.), almost all manufacturers, in ice cream, jelly, mashed potatoes, soups, yoghurts, mustard and carbonated drinks of yellow colors of all shades, sweets, cakes. Also, often, the dye E102 can be found in canned vegetables and fruits.
In pharmacology, E102 is used as a yellow dye for a number of drugs.

On the territory of our country, it is allowed to use E102 Tartrazine as a food dye, but its amount is strictly normalized.
