Riboflavin (Riboflavin, lactoflavin, vitamin B2, E101)is a yellow dye.
Varieties:
- (i) Riboflavin;
- (ii) The sodium salt of riboflavin-5-phosphate.
In the food industry, riboflavin is used to fortify certain foods with vitamin B2 or as a food coloring agent (E101).
It is found in many foods, such as eggs, milk, liver, and vegetables. It is produced on an industrial scale from yeast, but can also be synthesized artificially.
Poorly soluble in water.
The daily norm is up to 0.5 mg per kilogram of live weight.
Since the food dose does not exceed the norm, no side effects are observed.
