Cholic acid (E1000) is an emulsifier.
It is a monocarboxylic steroid acid from the bile acid group. Chemical formula C24H40O5.
The name of cholic acid comes from the Greek chole-bile, since the sodium salts of its compounds with the amino acids glycine (glycocholic acid) and taurine (taurocholic acid) are contained in the bile of animals and humans, participating in fat metabolism.
