Dumplings with potatoes and mushrooms: please. Video
Ukrainian dumplings are easy to prepare and store, hearty, tender and airy. They are not at all like traditional Russian dumplings, since the dough for them is kneaded not with water, but with yogurt or kefir. The result is voluminous, plump and very light dumplings that are ideal even for a festive table.
Ukrainian dough for dumplings with potatoes and mushrooms
For the Ukrainian version of this dish, you need to take whey or yogurt, but if they are not at hand, it is enough to buy fatty kefir in the store. Otherwise, the choice of ingredients is very simple:
– 0,5 l of kefir (whey or yogurt); – flour; – 2 raw eggs; – 0,5 tsp. soda; – a pinch of salt;
The amount of flour depends on your preference. The average amount of flour to be guided by is 5 cups
Pour kefir into a deep bowl, add a little salt, soda, 2 eggs and stir. Then add flour a little while continuing to stir the dough. The dough should be tough and elastic, not too sticky.
Knead the dough with your hands and then place it on a board, cover with a towel and leave for half an hour. In the meantime, start preparing the filling. To emphasize the belonging of the dish to Ukrainian cuisine, you can prepare dumplings with potatoes and cracklings, not forgetting to add mushrooms.
Stuffing for dumplings with potatoes and mushrooms
Even before preparing the filling, you need to decide on what the products will be fried, in vegetable oil or in lard. In the second case, the dish will turn out to be more satisfying and more nutritious. In addition to lard or butter, you will need the following ingredients: – 500 g of potatoes; – 300 g of mushrooms; – 1 onion; – salt and pepper to taste.
Finely chop the mushrooms and onion and fry, season with salt and pepper. While they are cooking, boil the potatoes in salted water.
It is advisable to pre-peel the potatoes, but if you do not have time for this, rinse and cook in their uniform, and then just remove the peel
Crush the finished potatoes, making mashed potatoes from them, and then add the onions, mushrooms and mix everything. Then put the filling aside and return to the dough, which by this time has already had time to rest.
How to cook dumplings in Ukrainian
You can roll out all the dough and make small circles with a glass, or cut off small pieces and roll each piece separately. You should choose the option that is more convenient for you; both are used in Ukrainian cuisines. Having prepared the circles, start spreading the filling on them and covering each dumpling with a crescent moon. It is not recommended to put too much filling in order to prevent the dough from breaking. Remember that Ukrainian dumplings are usually made from a thick layer of dough without stretching it.
Boil water, salt it and put the dumplings in a saucepan. When they come up, wait 2-3 minutes and remove. When placing the dumplings on a dish, grease them with butter.
