Juicy and dense duck meat is considered a real delicacy. A dish such as duck baked in the oven with apples is at the center of the table at many special occasions.

How to cook duck with apples in the oven

To cook baked duck in the oven, you will need:

  • 1 duck carcass weighing about two kilograms
  • 500 grams of apples (Antonovka or hard varieties, slightly sour)
  • lemon – 1 piece
  • spices (cinnamon, ginger, black pepper) – to taste
  • salt – to taste

It is preferable to use chilled duck carcass, but if not, frozen duck is fine.

– DEFROST. First of all, get busy with the preparation of the duck carcass. If it has been frozen, it must be defrosted first. Moreover, it is better to do this gradually – first place it in the refrigerator, and then continue the defrosting process at room temperature. For a chilled carcass, such manipulations are not required.

– OSHIP. If the duck is not plucked very well and there are hairs on it, they must be removed. To do this, scorch the carcass over the fire of a gas stove, this will quickly burn hairs and feathers. Leftovers from the skin can be easily removed by rolling the duck carcass in flour and then wiping it off with a damp towel. After all these manipulations, thoroughly rinse the duck with water.

– MARINAD. Prepare the mixture for rubbing the carcass should be in a separate bowl. To do this, add spices and salt there, and then mix all the ingredients thoroughly until a homogeneous consistency. Rub the duck evenly with the prepared mixture. Now start preparing the filling.

– APPLES. After washing the apples, peel them, free them from the seeds and cut into cubes or wedges. Then squeeze the juice of 1 lemon and drizzle over the sliced ​​apples to keep them from darkening. Sprinkle the apples with cinnamon and salt, if you wish, you can add any other spices of your choice. The filling is ready.

– FIRING. Next, you need to stuff the duck with the prepared filling. At the same time, you should not be too zealous and too tightly stuff the carcass with apples, since there is a possibility that during the baking process in the oven the skin of the bird may stretch and burst. After finishing stuffing, sew up the duck carcass. To do this, use a coarse thread and over-stitch. Make small cuts on the sides of the duck and tuck the duck wings into the resulting pockets. This will help keep the duck in shape while baking and avoid shrinking or drying out.

– SUPPLY. Remove any toothpicks or floss before serving the apple duck. This dish is usually served hot. The apples with which the duck is stuffed are laid out on plates as a side dish. The duck itself can be cut up in the presence of guests and put tidbits on a plate for everyone present.

With apples, lemon and honey

This recipe will take about 20-30 minutes to cook duck with apples before baking.

You will need the following ingredients:

  • duck – 1 carcass
  • apples – 2 pieces
  • lemon – 1 piece
  • honey – 1 tablespoon
  • vegetable (preferably olive) oil – 1 tablespoon
  • balsamic or wine vinegar – 1 teaspoon
  • soy sauce – 3 tablespoons
  • grated ginger root – 1 tablespoon
  • salt – to taste
  • ground black pepper – to taste

Prepare the duck marinade. To do this, first squeeze the juice out of the lemon. Combine wine or balsamic vinegar, soy sauce, lemon juice, honey, and vegetable oil in one container. Add finely grated ginger root there, mix everything thoroughly.

After cleaning the gutted duck, rinse it well under running water, then pat it dry with a paper towel. Combine ground black pepper and salt. Rub the duck carcass with this mixture, both outside and inside. Next, put the duck in a deep container, fill it with the cooked marinade and leave for about 8-12 hours.

Duck with apples in the oven

After washing the apples, cut them in half, then remove the pits and cut the remainder into wedges. Having laid the apples inside the abdomen of the duck, use toothpicks to secure the incision on the carcass. Place the duck with apples in a roasting bag or culinary sleeve and bake in an oven preheated to 180-200 ° C for about 1,5 hours. 10-15 minutes before the end of baking, open the bag slightly so that the duck with apples is properly browned.
