After roasting in beer, duck meat becomes juicy, tender and lean. The recipe is simple, it takes a little over 2 hours to prepare. The dish is suitable for both a festive table and a family dinner. It’s also a great snack with vodka.
Beer should be light and not very strong, otherwise the duck will be bitter. It is advisable to use sweet and sour hard apples, they are needed only for flavor. Instead of 3 apples, you can take 2-3 oranges.
Ingredients:
- duck carcass – 1 piece (1,5-2 kg);
- apples – 6-8 pieces;
- light beer – 1 liter (approximately);
- coriander, ground black pepper, salt – to taste.

1. Wash the duck carcass well, then dry with a paper towel.
2. Mix salt, pepper, coriander in a deep bowl.
3. Rub the inside and outside of the duck with the mixture.
4. Cut apples into 4-6 large pieces. Remove the core and bones, leave the skin.
5. Tightly stuff the duck with apple slices (can be mixed with orange slices). Close the abdomen by fastening the skin of the incision with toothpicks.
6. Put the carcass on the roaster or roaster, spread the remaining apples around the duck.
7. Fill the duck with beer so that most or all of the carcass is covered with liquid. The exact amount of beer depends on the volume of the roaster, the usual 1 liter is enough.
8. Preheat oven to 200°C. Cover the duck with a lid and place in the oven.
9. Bake for 60-90 minutes.
When baking, a persistent smell of beer appears, but after removing it from the oven, it will disappear.
10. Pull out the ducklings, drain about half of the liquid (maybe a little less). Gently turn the duck over to the other side and put in the oven for 30 minutes without a lid for the appearance of a golden crust. Make sure the meat doesn’t burn.
11. Remove apples from the finished duck, they are unsuitable for consumption.
12. Serve the dish hot.
