Dried soybean asparagus is an extremely popular product in Russia. It is boiled and fried and used for making salads. Its popularity is due to the fact that it is nutritious and at the same time low in calories. After all, it contains only about 21% fat. The nutritional value of such a product, experts say, is much higher than other soy products. However, if you take her hands for the first time, you might wonder: how can you cook her? There are a lot of recipes. You just need to choose the one that is right for you.

Soy asparagus cooks very quickly, and this is one of its advantages. So, if there is no time to wait for a full meal, it is quite possible to have a snack with asparagus salad and get enough for a long time.

Dried asparagus is often used as a stand-alone dish. For this, it is usually fried.

To prepare such a dish, you will need:

  • asparagus – 100 g
  • onions – 1 pcs.
  • carrots – 1 pcs.
  • green beans – 100 g
  • vegetable oil
  • a couple of cloves of garlic
  • cilantro green
  • ground black pepper

Start by pouring water over the asparagus (cold is fine) and letting it swell for 4 hours, then rinse and cut into slices. Chop the onion into cubes, grate the carrots or cut into strips. Pre-boil the green beans, then cut into small pieces. Place all vegetables in a skillet and fry in vegetable oil. Only then can you add the asparagus. Mix everything well, cover and leave to simmer for 10 minutes. Then it remains only to throw chopped greens into a frying pan, squeeze out the garlic and sprinkle everything with pepper. Turn off the stove and leave everything to rise for 5 minutes.

This dish is quite traditional for oriental cuisine. Therefore, it is best to serve asparagus with soy sauce and other seasonings or additives from Asian cuisine.

Traditionally, dried asparagus is found as a Korean salad with carrots.

To prepare such a dish at home, you will need:

  • package of asparagus
  • carrots – 1,5 kg
  • onions – 1 pcs.
  • ground pepper (black, red) – 1 tsp.
  • ground coriander – 4 tsp
  • 1 tbsp. soy sauce
  • vegetable oil – 1/2 cup
  • garlic – 5-6 cloves
  • salt, sugar to taste
  • vinegar 70% – 1,5-2 tbsp

To begin with, the asparagus must, of course, be steamed. For this, it is advisable to place it in warm salt water for 1,5 hours. Prepare the carrots during this time. Peel it and chop it or grate it on a coarse grater.

Remember that the asparagus should be slightly rubbery. It is not worth softening it completely: it will not taste good. So check the doneness of the product regularly while soaking.

Place the chopped carrots in a wide container, add sugar and salt to it, as well as vinegar and start stirring everything with your hands so that juice appears. Do not worry if during these manipulations the volume of carrots is halved. This is fine. Set the carrots aside for 15 minutes. In the meantime, start preparing the seasoning.

Chop the onion into rings, chop the garlic. Heat the oil in a frying pan and fry the onion, garlic, along with the coriander seasoning. When everything is fried, put the asparagus in the mass. Add soy sauce and mix well. Leave to cook for another minute, then add everything to the carrots. Next, you need to put the salad in the refrigerator. Asparagus is served with carrots, usually cold.

What to Consider With Soy Asparagus

By itself, this asparagus has nothing to do with vegetables. It is made from soy milk. To begin with, it is boiled, and then evaporated using special technologies, as a result of which these elastic tubes are obtained. They are dried and packaged. So people who have an intolerance to milk or soy products, it is better to refuse to use such a product.

It should also be borne in mind that most salads in which this product is used relate to oriental cuisine, which is dominated by spices. This means that asparagus as an independent dish and asparagus in a salad are quite spicy foods. Therefore, they should not be carried away by people with diseases of the gastrointestinal tract, as well as those who monitor their health.
