Dogwood pouring: 3 recipes at home

To prepare dogwood liqueur, you will need ripe and large berries, a sweetener, strong alcohol and a little time.

You can also prepare the liqueur by fermentation, without adding an alcohol-containing component. The process is laborious, but the result is worth it.

Pouring from dogwood on strong alcohol

In this recipe, sugar can be replaced with liquid honey. And instead of vodka, take diluted alcohol, high-quality moonshine without a strong odor, or inexpensive cognac.

Ingredients

  1. Dogwood – 500 g

  2. Vodka – 1 l

  3. Sugar – 50-150 g (to taste)

Method of preparation

  1. Dogwood, like any other berries, should be washed, the stalks removed, and small debris and spoiled fruits should be removed.

  2. In an infusion jar, using a wooden spatula, grind the berries to a gruel state.

  3. Pour in the prepared alcohol and leave for 20 days at room temperature in a dark place. Do not forget to shake the contents of the container once every 3-4 days.

  4. After the specified time, the infusion must be filtered and the cake thoroughly squeezed.

  5. Then pour the resulting drink into a clean container, add a sweetener and leave for another week in a cool place.

  6. Before tasting, the liqueur should be passed through a cotton filter and bottled.

  7. Shelf life – 5 years, the strength of the drink ranges from 28 to 33 degrees.

Dogwood pouring without the addition of alcohol

Ingredients

  1. Dogwood – 1 kg

  2. Raisins – 25 g

  3. Water – 150 g

  4. Granulated sugar – 500 g

Method of preparation

  1. Dogwood does not need to be washed before cooking, but it is necessary to remove the bones from it.

  2. We transfer the resulting pulp into a glass container, add unwashed raisins, water, and then add granulated sugar.

  3. Mix thoroughly, cover the neck of the jar with gauze and leave in a dark place at room temperature for 3-5 days.

  4. As soon as the first signs of fermentation appear, we replace the gauze with a water seal or a medical glove with a small hole in the finger.

  5. In the same place, dogwood liqueur will ferment for about 1–1,5 months.

  6. After the complete end of fermentation, the drink should be filtered, filtered and bottled.

  7. But before trying the dogwood liqueur, it must be kept for 5-6 months in a cellar or refrigerator.

  8. The strength of the finished product is low, only about 7-12 degrees.

Cornel liqueur with dried blueberries

Ingredients

  1. Vodka – 1 l

  2. Alcohol – 200 ml

  3. Water – 200 ml

  4. Ripe dogwood – 500 g

  5. Sugars – 200 g

  6. Dried blueberries – 100 g

Method of preparation

  1. Wash the berries, let the water drain. Mash and transfer to a jar or bottle along with pre-washed and dried blueberries.

  2. Pour vodka on top, close the vessel and keep in a warm place for 30 days.

  3. Prepare sugar syrup, remove from heat and immediately (hot) pour in alcohol, stir.

  4. Express the tincture through filter paper and mix with sugar syrup and alcohol, shake the vessel several times and leave it in the room for a day.

  5. Carefully pour the resulting liquor into dry bottles, cork tightly and store until consumed in a dark and cold place for at least 6 months.
