In this post we are going to explain how to make a garlic soup with Mahón cheese, an intense dish and, in addition, gratin

If you like the traditional Castilian garlic soup, but you are looking for a variation of this dish with a more intense flavor, you are in the right place.

Of course, before doing so, we anticipate that let’s focus on the simple version of this dish, so that you do not have to spend a lot of effort or time (in just 45 minutes it will be ready) to enjoy this tasty first course. Pay attention:

Garlic Soup with Mahón Cheese Recipe

Ingredients for 4 people

  • 1 l of meat broth or defatted stew
  • ½ level tablespoon of paprika
  • 3 garlic cloves, sliced
  • 4 slices of sitting bread *
  • 6-8 thin slices of seated bread
  • 6 tablespoons (large) of Mahón cheese, grated coarsely
  • 80 ml of aceite oliva
  • Sal Island
  • Pepper

* Sitting bread is nothing other than the previous day’s bread, although the Royal Spanish Academy defines it as “bread very dipped in flour, when a day passes after it is cooked and while it remains rubbery.”

Crafting

Making the garlic soup with Mahón cheese consists of two parts:

  • Preparation: 25 minutes
  • Cook: 15 minutes

In total, it takes 40 minutes to prepare this dish. And, to do so, you must follow these steps:

  1. Cut the bread sitting down and remove the crust. Well, the latter is optional, so you can leave the crust if you prefer. However, our recommendation is not to do it (remember that sitting bread is already harder than usual).
  2. Place the bread cut (with or without rind) in a deep plate.
  3. Splash the plate with water and place it on top of a cloth or moistened kitchen paper.
  4. Let stand the plate for a long time.
  5. Heat the 80 ml of oil in a large skillet and, once hot, turn the heat to very low before moving on to the next step.
  6. Add the bread to the pan and fry while moving (without stopping) the bread. In this way, you will ensure that the bread is regularly impregnated with oil, but without getting soggy.
  7. Add before it ends the garlic fry.
  8. Add the salt and paprika (It is important that you add this ingredient at the end so that it does not burn).
  9. Dip with the broth, add a little pepper and cook for a few more minutes (so that the bread becomes fluffy).
  10. Check that no more salt is needed, or add a pinch more if necessary.
  11. Put the soup through the grinder and reheat in a saucepan.
  12. Turn on the oven grill to the maximum and, in the meantime, Place the bread slices on the baking sheet.
  13. Paint the slices with a little oil and place them on top of the cheese well distributed.
  14. Put the slices under the grill (at a distance) until they merge.
  15. And finally, serve the hot soup with the slices of bread and cheese.
