Mushrooms absorb liquid quickly and in large quantities. Therefore, the less the product stays in water, the richer the taste of the finished dish will turn out.

To clean the mushrooms from dirt and prevent them from swelling, you should use the following tips:

· Rinse the mushrooms in running water;

· Immediately place the product on a towel. The fabric will absorb excess liquid.

Champignons are so safe to eat that even raw (but washed), these mushrooms will not cause poisoning. However, the taste of a dish depends on proper handling before cooking.

If the mushrooms are less than two centimeters in size, then enough:

· Rinse them from dirt;

· Remove the skin from the old cut with a knife.

Champignons larger than five centimeters are recommended to be processed as follows:

· Wash off adhering dirt in water;

Remove the film from the cap (during cooking, the skin hardly softens, which spoils the taste of the dish);

· Update the incision of the leg (if the mushrooms were in the refrigerator before cleaning, make the incision one centimeter deeper);

· Be sure to remove damaged areas.

Ripe champignons have a “skirt” on the leg – a white ring. Should I delete it?

On the one hand, such an education is not poisonous. But to decorate the dish, this “skirt” is sometimes cut off. Together with this part, the plates under the cap of the fruiting body are removed. Although there is aesthetic sense in cleaning dark areas, the aroma of mushroom food becomes weaker at the same time.

It is also worth taking care that the mushrooms are whole, do not contain rot, and smell nice. The mushrooms should not be slimy to the touch, and there should be no spots on the cap of the champignon (the dark top of the mushroom indicates that it was cut at least five days ago). The fruiting body should be firm and not like a sponge.

Do mushrooms need to be peeled? Definitely yes. Insufficient processing causes eating disorders, often fungi are the habitat of parasite larvae. Therefore, the opinion that it is not necessary to peel champignons is the cause of health problems.
