Dishes from pumpkin

Pumpkin … who has a pumpkin associated with? First of all, she is a symbol of Halloween. As a rule, dishes with a high content of this fruit are prepared for this holiday in Europe and America.

Pumpkin is delicious, being cooked sweet, baked with pepper and cheese – you will not drag your home ones away, and pumpkin pie is a classic of the genre!

 

Where to start?

And we will start, as expected, in the morning. From breakfast. Pumpkin is especially good on Monday morning, when any portion of joy can be decisive on the scales of mood. It would seem that pumpkin is a dish that can be used as a side dish or a late evening dinner … But no, we will introduce you to the “Sun” pumpkin pancakes!

Pumpkin pancakes “Sun”

Ingredients:

  • pumpkin – 400 gr.
  • egg – 1 pcs.
  • apple (large) – 1 pc.
  • milk – 1 glass
  • flour – 6-7 tbsp. l.
  • salt – to taste

So, first you need to grate the pumpkin and apple on a coarse grater, simmer until soft in milk over medium heat. Then cool, mix with flour, egg, add salt (optional). Fry in a skillet with vegetable (olive) oil, serve on the table with honey, vanilla, cinnamon. Fans of “spicier” can add red pepper.

It takes an insignificant amount of time, but, what is remarkable, it comes out tasty and not sugary at all.

 

Let’s move on to dinner, or rather, to soup and salad. Usually, puree soup is prepared, and we present one of the most delicious recipes for your review.

Pumpkin soup “Bird’s happiness”

Ingredients:

  • chicken (medium-sized) – 1 pc.
  • onions – 1-2 pcs.
  • pumpkin (peeled) – 600 gr.
  • potatoes – 1-2 pcs.
  • butter – 60 gr.
  • greens to taste
  • pepper – to taste
  • salt – to taste

Pour the chicken with water, cook until boiling, then drain the water, wash the chicken, then pour cold boiled water and cook, periodically removing the foam, for two hours. Cut vegetables into cubes or shavings. Heat the oil in another saucepan, then add not coarsely chopped onion and fry until it is transparent. Add potatoes, stirring, fry for three to four minutes, at the very end – pumpkin time. Cook until the pumpkin is light.

 

Pour in a little chicken broth, dipping vegetables completely, cook until pumpkin and potatoes are fully cooked. Remove the pan from the stove and beat with a blender until puree. Season with herbs, nutmeg, salt – to taste. Add chicken and enjoy.

There is a great variety of pumpkin salads, we will take not the simplest of them – but fragrant, with many seasonings that give a completely unique taste.

Pumpkin salad “Carmen”

Ingredients:

 
  • pumpkin (peeled) – 400 gr.
  • sweet red pepper – 4 pcs.
  • red onion – 3 pcs.
  • dill – 1-2 bunches
  • garlic – 5 cloves
  • water (marinade) – 700 ml.
  • vegetable oil (marinade) – 60 ml.
  • vinegar (apple, 6%, marinade) – 120 ml.
  • sugar (marinade) – 8 tbsp. l.
  • salt (marinade) – 3 tbsp. l.
  • chili (marinade) – 2 pcs.
  • a mixture of allspice and black peppers (marinade) – 10 pcs.
  • clove buds (marinade) – 5 pcs.
  • ground cinnamon (marinade) – 1 tsp
  • bay leaf (marinade) – 4 pcs.

We cut vegetables into thin plastics. Prepare the marinade: mix everything (water, oil, vinegar, sugar, salt, chili, a mixture of peppers, cloves, cinnamon and bay leaves), simmer for 5-6 minutes over low heat. Pour the chopped vegetables with marinade, leave in the refrigerator for three days – and enjoy an exquisite dish.

The second meal for lunch is also not so difficult as it seems at first glance.

Pumpkin Stew “Halloween Dark Night”

Ingredients:

 
  • beef – 600 gr.
  • butter – 30-40 gr.
  • bay leaf – 3-4 pcs.
  • dark beer – 0,5 (0,6) l.
  • garlic – 5 cloves
  • onions – 2 pcs.
  • pumpkin pulp – 1,5 kg.
  • cover – 0,5 tsp.
  • carrots – 1-2 pcs.
  • sugar (if necessary) – 3 tsp.
  • greens, pepper, salt – to taste

Cut the onion into even rings. We clean the meat from films, cut into small cubes. Warm butter in a deep saucepan. Sprinkle the meat with salt and pepper (if necessary) and fry over high (but not very) heat until a dark crust appears. Throw the onion to the meat and fry for five to six minutes. We cut the garlic, send it there. Add sugar, cinnamon, bay leaf.

Fill with beer, cover, simmer for 2 hours over low heat. In 20 minutes. add pumpkin, cut into small cubes, bring to readiness for twenty minutes. We insist for XNUMX hours and serve the next day.

You can serve it with any side dishes or a separate dish – from this “Halloween’s Dark Night” only benefits.

 

Finally, the sweetest and most long-awaited moment in the cooking process is dessert! As a dessert, you could have taken traditional pumpkin pies or equally delicious pastries, but we do not want to look for too easy ways and, in turn, choose not an original, but really tasty dish.

Pumpkin dessert “Dawn”

Ingredients:

  • pumpkin
  • orange (zest, juice) – 2 pcs.
  • honey – 4-5 tbsp. l.
  • cinnamon – 2 tbsp. l.

The pumpkin must be washed, divided into parts. Put the pieces on a baking sheet, placing them in a preheated oven for 30-40 minutes. at a temperature of about 180 degrees. Separate the peel.

Carefully cut off the zest from the orange without touching the bitter layer. Cut the pumpkin slices into medium-sized cubes, mix with honey and zest, and squeeze the juice there. Stir well, put in the oven for 40-50 minutes, taking out three times and stirring. Sprinkle with cinnamon and serve on the festive table – however, this dish is perfect for an ordinary day as well.

Initially dessert, it is nutritious and diverse, and most importantly, it is combined with almost all products and spices and is great both for a festive table, as well as for an ordinary working day, when you want to pamper yourself and your loved ones.
