Description of oak mushroom, recipes
The oak mushroom is harvested in deciduous forests from May to September. It is used to prepare soups, main courses and snacks for the winter.
This mushroom is popularly called poddubnik, as it often grows in oak groves.

Description:
- a wide hat resembles a hemisphere in shape, the skin is dry and velvety to the touch. Its color can be light yellow or dark brown;
- the fleshy leg expands downward;
- the flesh is yellow or brown-red, turns blue on the cut. For this feature, the mushroom is also called a bruise;
- does not have a pronounced taste and smell.
In shape, the oak tree is similar to the boletus, but differs in the color of the cap and leg. Duboviks grow in the European part of our country, Eastern Siberia and the Caucasus. In the north, they are quite rare. Poddubniki grow singly or in small groups in open meadows.
Recipe for oak mushrooms in tomato sauce
This dish goes well with meat, pasta, potatoes or salad.
Ingredients:
- mushrooms – 200 g;
- tomatoes – 100 g;
- pickled cucumbers – 2 pcs.;
- tomato paste – 90 g;
- onion – 1 pcs .;
- vegetable oil – 60 g;
- Garlic – 2 cloves;
- salt and spices to taste.
Preparation:
- Soak poddubniki in cool water for a day.
- Dip the mushrooms in boiling water and cook for 5 minutes. Drain the water and repeat the procedure 2 more times.
- Chop the onion and garlic, fry the vegetables in vegetable oil until transparent.
- Add mushrooms, cut into large pieces. Cook food together for 10 minutes.
- Pour boiling water over the tomatoes, remove the skin and rub the pulp through a sieve.
- Add tomato puree, paste, salt and spices to the mushrooms. Simmer the treat over low heat for another 10 minutes.
Garnish with fresh basil leaves before serving.
Open pie with oak mushroom and cheese
Your guests will appreciate the combination of tender dough and hearty filling.
Ingredients:
- mushrooms – 400 g;
- wheat flour – 350 g;
- sour cream – 350 g;
- butter – 180 g;
- hard cheese – 150 g;
- chicken eggs – 3 pcs .;
- onion – 1 pcs .;
- milk – 60 g;
- sunflower oil – 30 g;
- salt and ground pepper to taste.
Sequence of preparation:
- Soak the mushrooms and leave them for 12-14 hours. Cook the pieces for 15 minutes, draining the water every 5 minutes.
- Cut the onion into half rings and cut the oak wood into small pieces. Fry foods in vegetable oil, add salt and pepper.
- Mix 150 g sour cream and soft butter. Add the sifted flour and knead the dough.
- Whisk the remaining sour cream with milk and grated cheese. Salt the fill.
- Line a 24-26 cm baking dish with parchment and place the dough on top of it. Spread it along the bottom with your hands, form the sides.
- Lay out the filling and cover with the cheese mixture. Level the surface.
- Bake the cake in an oven preheated to 180 ° C for 35-40 minutes.
Serve baked goods with tea, coffee, or warm milk.
Untreated oak trees contain toxins that can cause food poisoning. Therefore, before cooking, the mushrooms must be soaked and boiled several times. Dishes and snacks from the poddubnik must not be consumed with alcohol.
