Tips before starting
The color of the dates should be dark brown and have a matte texture.
Dates should not stick to hands, have cracks and be of medium softness.
Moldy and sour “notes” should not be felt in the smell.

Classic date liqueur recipe
Ingredients
Dates (pitted) – 500 g
Alcohol (70%) – 1 l
Honey – 400 g
Water – 1 L
Tarragon – 1/2 tsp.
Cumin – 1 h. l.
Cardamom – 1 tsp.
Carnation – 2 pcs.
Nutmeg – 1 g
Oak bark – 1 g
Method of preparation
All spices and herbs are poured into a glass container, poured with alcohol and let it brew in a dark place for 5 days. Don’t forget to shake daily.
After 5 days, it is necessary to filter the alcohol tincture through a purchased or home-made filter. Pour into a clean glass container and set aside.
Dates must be sorted out, pitted and rinsed thoroughly under running water.
We put the prepared dates into a saucepan and pour water (2 cm above the dates, if the indicated water is not enough, then you can add it), bring to a boil and boil for 5 minutes over low heat.
Cool the date broth to 60 degrees and add honey, mix until it is completely dissolved.
Pour the alcohol infusion, the contents of the pan into a glass container and add the oak bark, then mix thoroughly.
Let it brew for 10 days in a dark, cool place.
After this time, the liquor must be filtered and poured into glass bottles.
Before tasting the drink, let it brew for 2 months.
Store the finished date liqueur in a cool, dark place.
Date liqueur Tunisia
Ingredients
Dates – 200 g
Cognac – 500 ml
Bean vanilla – half
Carnation – 2 pcs.
Water – 100 g
Sugars – 100 g
Method of preparation
Sort the dates, remove the pit, rinse thoroughly under running water and cut into small pieces.
Split the vanilla pod, remove the seeds and cut the half into small pieces.
In a glass container, we shift the prepared dates, chopped vanilla pod and its seeds. Then add cognac and let it brew for 1 month.
After 30 days, it is necessary to filter the liquor several times through a purchased or home-made filter.
Cook simple sugar syrup.
After cooling, mix with cognac tincture, mix thoroughly and let it brew for 2 weeks in a dark, cool place.
After 14 days, we filter again and pour into glass bottles.
Before tasting, it is advisable to insist another 10-14 days.
