Curd casserole is the perfect dish. Make it sweet and it will serve as a wonderful breakfast, giving energy to the body, strength of bones and strength of muscles. Add meat, vegetables, fish to it – and now a low-calorie second course or light dinner is ready.

Classic curd casserole

The classic casserole is sweet, fluffy and tender. Its basis is homogeneous, rather fatty cottage cheese. Do not try to cook your traditional casserole with a dry, fat-free product; it will get “plastic” and most likely burn. For 500 g of good cottage cheese, you will need:

– 2 large chicken eggs; – ½ glass of fine sugar; – 1,5 tablespoons of wheat flour; – 1 tablespoon of semolina; – ½ teaspoon freshly squeezed lemon juice; – zest with ½ lemon; – a pinch of salt.

For a shiny glaze, take: – 1 cup sour cream; – 1 teaspoon of vanilla extract; – 3 tablespoons of sugar.

You can add half a cup of small, golden, soft raisins, chopped dried apricots or dried cranberries to a classic casserole

Separate the egg yolks from the whites. The most convenient way to do this is with a special device that looks like a spoon with a hole, but you can also just pass the protein through your fingers. Beat the yolks with sugar until a persistent, thick white foam is formed. Rub the curd through a fine sieve. Mix it with flour, lemon juice and zest, salt and semolina, add the yolk mass. Place the egg whites in a dry, clean bowl and beat on medium speed; when a stable foam appears on them, increase the revolutions and beat until stiff peaks. Mix the proteins with the curd using the “folding” technique. The finished mass should be thick enough. Place it in a greased, high-edged baking dish, smooth the surface with a silicone spatula and bake in a preheated oven to 180 degrees for 20-25 minutes. Whisk the sour cream, sugar and vanilla extract lightly and apply to the golden top of the casserole. Serve warm or chilled.

Light curd casserole recipe

Those who are not very fond of sweets and counts every extra calorie, prepare a diet curd casserole with a minimum amount of flour, sugar, without semolina, and even more so without a glossy sour cream coating. If you want to follow their example, take: – 500 g of cottage cheese with a fat content of at least 5%; – 1 teaspoon of salt; – 3 chicken eggs; – 3 tablespoons of sugar; – 1 glass of milk; – a pinch of nutmeg.

Preheat oven to 170 degrees. Wipe the cottage cheese through a sieve, add salt, flour and sugar to it. In a separate bowl, beat the egg yolks, whisking, add milk, mix with cottage cheese. Beat the egg whites until stiff peaks, add them to the curd mass, without beating, but gently stirring with a flat spatula from the edges to the center. Place in a greased baking dish, season with nutmeg, place in a larger baking sheet filled with water and bake in a water bath in a preheated oven for an hour.

Cottage cheese casserole with pears

If you want to serve a curd casserole for dessert or prepare it for Sunday’s leisurely, sumptuous breakfast, recipes with fruits are suitable for you. For example, with fragrant pears. You will need: – 8 tablespoons of softened butter; – 3/4 cup sugar; – 2 teaspoons of vanilla extract; – 3 chicken eggs at room temperature; – 400 g of cottage cheese with a fat content of at least 9%; – ¾ a glass of semolina; – 3-4 pears; – ½ tablespoons of lemon juice.

You can substitute apples, peaches, fresh and frozen berries for pears. Juicy, soft fruits and berries do not need to be processed before adding to the casserole

Divide the eggs into yolks and whites. Beat the softened butter and sugar with a mixer until a light fluffy foam is formed, add the egg yolks. Continue to beat until smooth, add semolina in a thin stream, add cottage cheese. Beat the egg whites until stiff peaks and use a spatula to combine with the curd dough. Peel and cut the pears into thin slices, remembering to remove the core. Sprinkle the pears with lemon juice and gently place on the bottom of a greased baking dish. Place the curd dough on top and bake a delicious curd dessert in an oven preheated to 160 degrees for 40-50 minutes. Serve sprinkled with powdered sugar.

Snack casserole with spinach and leeks

Many people know the “kindergarten” version of the casserole – with pasta. This, of course, is a hearty dish, which, by the way, combines proteins and carbohydrates, but cottage cheese with vegetables is much healthier. You will need: – 1 stalk of leeks; – 2 teaspoons of olive oil; – 200 g spinach leaves; – 5 eggs; – 200 g of low-fat cottage cheese; – 100 g feta; – salt and pepper.

Preheat oven to 190 degrees. Slice the leeks diagonally and disassemble into rings. Heat the olive oil in a skillet and fry the onion in it until transparent. Rinse and dry the spinach leaves, add them to the onions and cook for 3-4 minutes. Beat eggs. Combine crumbled feta with curd, mashed with a fork. Put the vegetable mixture on the bottom of the mold, then spread the cottage cheese and cheese over it and cover with beaten eggs. Bake for about 20-25 minutes. Serve hot, garnish with a spoonful of thick yogurt.
