One of the simplest summer salads combines fresh tomatoes and cucumbers. Such a dish is prepared in a few minutes and served as an appetizer or as a side dish for meat. The duo of vegetables can be supplemented with herbs, spices and a variety of dressings.

Cucumber and Tomato Salad

For a delicious tomato and cucumber salad, choose ripe, fleshy, sweet tomatoes. Fresh cucumbers can be chopped or grated and squeezed – this method is suitable for those who do not like a lot of liquid in the salad. Instead of fresh cucumbers, try putting pickled or pickled cucumbers in the salad – the salad will acquire a special original taste. In addition to tomatoes and cucumbers, bell peppers, radishes, lettuce, as well as more satisfying ingredients, such as boiled pasta, are added to the dish.

Another little trick is adding the right spices. So that the vegetables are evenly salted and the sauce remains tasty, lay the tomatoes and cucumbers in layers, sprinkling with salt. Let the salad sit for a quarter of an hour without stirring, and then add sour cream or vegetable oil.

Don’t limit yourself to your usual recipes, but feel free to vary your salad dressings. A mixture of tomatoes and cucumbers can be supplemented with vegetable oil – mustard, olive, sunflower. Unrefined oil will give a special shade. Salad with fresh sour cream or yoghurt mixed with grain mustard and lemon juice is also tasty.

Summer cucumber and tomato salad

You will need: – 4 medium-sized ripe sweet tomatoes; – 3 small fresh cucumbers; – 1 sweet pepper; – a bunch of green onions; – a bunch of green garlic; – fresh herbs (parsley, dill, basil, mustard); – fresh sour cream; – salt; – freshly ground black pepper.

Wash cucumbers and tomatoes, pat dry. Cut the tomatoes into slices, chop the cucumbers. Peel the pepper from partitions and seeds, cut into thin half rings. Chop green onions, garlic, parsley and other herbs.

Put a layer of tomatoes in a salad bowl, salt. Then add cucumbers and peppers, sprinkling salt on each layer. Add chopped greens and let the lettuce stand at room temperature for 15 minutes.

Pour in sour cream, add freshly ground black pepper and mix the salad thoroughly. Serve as a side dish with grilled meat, fish or sausages. This salad is also good as a light snack.

Autumn salad with pickles

You will need: – 2 strong pickles; – 3 medium-sized sweet meaty tomatoes; – 2 cloves of garlic; – 1 onion; – a bunch of dill and parsley; – freshly ground black pepper; – a pinch of sugar; – salt; – unrefined sunflower oil.

Pickled cucumbers can be substituted for pickled cucumbers. In this case, eliminate sugar from the recipe.

Cut the tomatoes into slices, pickles into thin slices. Peel and grind the garlic in a mortar. Chop parsley and dill, chop the onion into rings.

Put tomatoes, cucumbers, onions, herbs and garlic in a salad bowl. Add sugar and sunflower oil, mix everything thoroughly. Salt the salad if necessary, but the cucumbers usually make it quite salty.
