Creamy salmon steak sauce. Video
Sauces based on cream have a mild, delicate taste that complements and emphasizes the aroma and taste of vegetable, meat and fish dishes. If you decide to indulge your homemade salmon steaks, which cook very quickly, you can serve them with a creamy sauce, which also won’t take you long to prepare.
What products do you need
It is known that colors can affect appetite. So yellow, green, red and orange stimulate it. Use bell pepper for the creamy sauce – paprika of one of these colors and the salmon steak will taste twice as delicious. For this sauce you will need: – 1 pc. bell pepper, paprika; – 1 glass of cream 20-25%; – 25 g butter; – 1 tbsp. corn flour; – fresh herbs: dill, parsley, cilantro, tarragon; – ½ tsp ground coriander; – ¼ tsp ground black pepper; – ½ cm of ginger root; – salt to taste.
How to make a creamy sauce
Peel and grate the ginger root. In this form, it will be enough to take it with half a teaspoon. If the root is missing, you can replace the ginger with a finely chopped garlic clove to add a spicy flavor to the sauce. Wash the pepper, cut in half, remove the stalk, core and all the seeds. Cut it into small pieces. Wash the greens, pat dry with kitchen paper towels, chop as small as possible.
Preheat a frying pan, melt the butter on it, fry the chopped peppers on it until soft, add cream and grated ginger, salt and simmer everything together for another 2 minutes. Transfer the contents of the pan to the chopper of a blender and grind well until smooth.
Pour the resulting mixture into a pan, add corn flour, ground coriander and black pepper, finely chopped herbs to it. Stir well to disperse the flour. Heat the skillet to thicken the sauce, but do not bring it to a boil. Remove the skillet from the stove, pour the sauce into a separate bowl, and let it stand for a while to flavor and cool slightly.
The good thing about cornmeal is that it disperses without lumps in hot liquid. It can be replaced with wheat one, after diluting it in a small amount of warm water and filtering it through a sieve
How to make a salmon steak
To cook delicious salmon steaks properly, first fry them for 2 minutes on each side in a hot skillet with a little vegetable oil. There is no need to salt the steaks in advance – this is done during frying, at the same time sprinkling with black pepper. Preheat the oven to 230-250 degrees and immediately place the steaks from the pan into it, bake them for another 5-6 minutes. Serve them with a creamy rice sauce or mashed potatoes, garnished with 2-3 sprigs of fresh herbs or lettuce.
