Light, delicate and lush creams made from cream are the dream of many sweet tooths. It is these airy decorations that turn ordinary cakes into real works of art. Also, you can make excellent dessert creams from cream, which can become a real highlight and decoration of the festive table.
Cream of cream for cakes and pastries
To make cream from cake or pastry cream you will need:
– 200 milliliters of cream; – 60 grams of powdered sugar; – vanilla sugar (on the tip of a knife); – 2 grams of gelatin.
If cream made from cream is prepared to decorate a cake, it should be borne in mind that it is unstable and quickly loses its shape, so it must be done immediately before use.
To begin with, soak gelatin for 20 minutes in a little cold water (see the proportions on the package). As soon as the gelatin swells, put on fire and boil until completely dissolved. Then cool it down.
For cream, choose heavy cream. When whipped, only they give a fluffy, stable foam. First, whisk the cream well with a whisk or mixer until fluffy. Without stopping whisking, add powdered sugar in small portions to the creamy mixture, add vanillin. Whisk all ingredients until smooth.
After that, without ceasing to beat, gradually pour in the chilled gelatin. When the creamy mass thickens, becomes fluffy and homogeneous, the cream is ready.
To make Air Kiss dessert cream, you need the following ingredients:
– 1 cup 35% cream; – 150 grams of granulated sugar; – 2 eggs; – 1 tablespoon of gelatin; – vanilla sugar on the tip of a knife; – apricots or cherries (pitted) from compote.
First of all, pour the gelatin ½ cup of water and let it swell for about an hour. Heat the cream and put the swollen gelatin in it, stirring until it is completely dissolved.
Separate the whites from the yolks, put the whites in the refrigerator, and grind the yolks white with 100 grams of granulated sugar and vanilla. Then whisk the cooled egg whites with the remaining sugar into a stiff froth.
Combine the cooled cream with the yolks and whipped cream. Stir very gently. Make sure the squirrels don’t settle.
Dessert cream made from air kiss cream can be prepared with any fruit to taste: bananas, peaches, pineapples, strawberries, currants. Moreover, fruits can be used both canned and fresh.
Spread half of the resulting cream on glass glasses, bowls, or put in a large transparent vase on a leg and refrigerate. When the cream has slightly hardened, place a layer of apricots or cherries on it and cover with the other part of the cream. Close the lid and put the dessert cream back in the refrigerator.
It is better to cook this cream in the morning or at night, so that it has time to harden well before serving.
