Kvass is a traditional Slavic drink that does not contain alcohol. It not only quenches thirst well, but also has a positive effect on the body. A drink purchased at a store contains many impurities, and they, in turn, are not always beneficial for the human body. Therefore, it is better to give preference to kvass, which is prepared according to one of the recipes on your own. There are several basic recipes. Cranberry kvass is a good solution, as it is refreshing and suitable for children and adults to consume.

A simple recipe for kvass from cranberries

Delicious bright-colored sweet and sour drink will be appreciated by many. Homemade cranberry kvass is usually highly carbonated. Even 20-30 years ago, it was difficult to cook it, because it was not possible to find all the necessary ingredients. But today in supermarkets at any time of the year you can buy, if not fresh berries, then at least frozen ones.

Ingredients for making a simple recipe:

  • 10 Art. water;
  • 0,4 kg cranberries (fresh or frozen);
  • 1 st. granulated sugar;
  • 1 tsp. dry yeast.
Important! If you replace sugar with honey, then the drink will turn out to be even more useful and enjoyable, but it is better to add it to warm cranberry kvass, and not to hot.

The product is prepared according to this recipe as follows:

  1. Sort the cranberries, remove the spoiled ones and rinse under water. If they are frozen, defrost and dry thoroughly.
  2. Grind the cranberries through a sieve so that only one skin remains. It is necessary in the end to get a liquid cranberry puree. You need to add it raw – then there will be more useful substances.

    To make the processing process faster, it is better to grind the berries with a blender beforehand.

  3. Put the pan on the fire, adding 1 liter of water and cake left after grinding the berries. Boil. Then add sugar and wait until it boils again. Boil 5 minutes.
  4. Remove from heat and let the cranberry drink cool. Then strain through a sieve, while the cake must be carefully squeezed out.
  5. Then you need to pour a glass of warm kvass. It will be needed in order to dilute the yeast.
  6. Combine all ingredients of the recipe and mix. Let the yeast rise for 20 minutes, then add it to the composition.

    Good fresh yeast should foam up after 15-20 minutes. If not, then the product is defective.

  7. Mix everything, cover the dishes with cling film or gauze, leave for 10-12 hours for fermentation. After the allotted time, foam should appear on the surface – this is a good sign indicating the correct fermentation process.
  8. Pour into bottles or simply close the lid tightly, refrigerate for three days to make it saturated. During this time, the smell of yeast will disappear, and kvass will become carbonated.

Ready berry drink can be stored in the refrigerator for up to two weeks, while every day it will become tastier.

Important! For fermentation, it is better to choose dishes made of glass, ceramics or enamel.

Recipe for yeast cranberry kvass

Cranberry kvass with various additives is recommended for people with hypertension, hematopoietic diseases and anemia. To prepare a fortified drink according to this recipe, you will need:

  • 0,5 kg of cranberries;
  • 2 st. Sahara;
  • 5 L of water;
  • 1 tsp. dry yeast;
  • 1 tsp raisins;
  • 20 rye bread crackers;
  • 1 tsp oregano herbs.

This recipe is prepared like this:

  1. Mash the cranberries thoroughly, pour warm water over, mix.
  2. Add water to the yeast in a separate container and give it time to rise.
  3. Combine all the ingredients of cranberry kvass together, mix and leave in a warm place for a day so that it begins to ferment.
  4. Pour into bottles and leave for another 8 hours.
  5. Ready kvass from cranberries should be stored in the refrigerator.

Cranberry kvass

Any of the drinks according to the presented recipes improves digestion, contributing to the easy absorption of food. It also strengthens blood vessels, is rich in vitamin C and trace elements necessary for the proper functioning of the human body systems: iron, manganese, molybdenum.

You can add not only oregano to the recipe, but also lemon juice, mint, lemon balm and other herbs that make the drink even more spicy.

Important! It must be remembered that yeast contains purine bases, which delay the excretion of uric acid from the body, which can eventually provoke inflammation in the joints.

When preparing kvass according to any of the recipes, it is important to carefully sort out the berries so that there is no dirt or damage in them. Otherwise, the workpiece will be damaged. Cranberry kvass without yeast is very useful. For its preparation, you will need the following products:

  • 4 L of water;
  • 1 kg of cranberries;
  • 0,5 kg of sugar;
  • 1 tbsp. l raisins.

According to this recipe, you can cook kvass not only from cranberries, but also from raspberries, blueberries, currants, blackberries, lingonberries.

Step-by-step cooking technology:

  1. Carefully sort the berries, removing all inedible parts, rinse under running water and dry on a paper towel. After these procedures, cranberries are transferred to a container and crushed to a puree consistency.
  2. Boil syrup from water and granulated sugar, pour over cranberries and mix.
  3. The acidity of kvass can be reduced by adding honey to it.
  4. Cover the container with gauze and let it brew for 24 hours.
  5. After a day, filter and bottle into bottles, in each of which you need to add a few pieces of raisins.
  6. Close tightly and store in the refrigerator.
