Start cooking cutlets with sauce, as it should have time to infuse and cool. Combine homemade mayonnaise with buttermilk, add dill and one tablespoon of chopped parsley, lemon zest and one chopped garlic clove. Cover the sauce bowl with cling film and refrigerate.
Melt one tablespoon unsalted butter over medium heat, sauté the chopped onion feathers, the remaining chopped garlic, and red bell pepper. Remove from heat. Add cream, mustard, raw chicken egg, parsley and ½ cup bread crumbs. Toss and place in minced crab meat. Form 8-10 patties. In a bowl, combine the chopped parmesan and the remaining bread crumbs. Dip the cutlets in the mixture and place them on a board lined with baking parchment. Refrigerate for 2-3 hours.
Melt the remaining butter in a frying pan, mix it with vegetable oil. Fry the patties until golden brown, fry about 3-4 minutes on each side over medium heat. You can also put the patties on a baking sheet and bake in an oven preheated to 200 degrees for 7-10 minutes. It is very tasty to eat such cutlets hot with cold sauce.
Crab meat soup
Delicate creamy soup goes well with the delicate taste of tender crab meat. You will need: – ¾ a cup of chopped green onion feathers; – 2 teaspoons of minced garlic; – 4 tablespoons unsalted butter; – 3 tablespoons of wheat flour; – 2 glasses of fish broth; – 1 glass of cream, 20% fat; – 500 g of crab meat; – ¼ glass of sherry; – ½ teaspoon white pepper; – ½ teaspoon of salt; – 1 glass of grated Parmesan; – ½ glass of chopped onions.
Sauté chopped green onions and chopped garlic in melted butter in a heavy-bottomed saucepan. Add flour and cook, stirring occasionally, until light nutty flavor. Pour in fish broth slowly, cook, stirring occasionally, until smooth. Pour in cream and milk, add crab meat and parmesan, add sherry, season with pepper and salt.
