Why squid meat cannot be cooked for a long time
Inexperienced housewives believe that the longer the squid meat is cooked or stewed, the softer it will be. But this is not at all the case. Squid meat is almost 100% protein, so with long heat treatment – frying or boiling – it hardens, becomes tough and tasteless. In addition, being exposed to prolonged exposure to high temperatures, it loses all the nutrients that it contains.
When buying squid meat from the store, pay attention to its appearance. Carcasses should not be frozen – this is a sign that storage conditions have been violated and the squid meat has already been defrosted and then frozen again
How to cook squid properly
In fact, the secret to cooking squid is very simple. They are usually sold frozen. If you are not going to cook them right away, you should bring them home as soon as possible and place them in the freezer of the refrigerator to avoid defrosting.
Defrost squid properly before cooking. Transfer the bag of squid meat to the bottom shelf of the refrigerator, or let it sit at room temperature for a while. There is no need to defrost the product in running water – in this case, some of the nutrients can simply be washed out under the stream.
If you purchased unpeeled frozen carcasses, the skin must be removed before cooking. To do this, boil a pot of water and place each carcass in boiling water one by one for a few seconds. After that, put them in a bowl, fill them with a small amount of cold water and use your hands to clean the carcasses from the skin, which will easily separate.
Squid meat is used to prepare various salads. They can be stuffed with minced fish and baked in the oven. They can also be cut into circles, salt, pepper and sautéed in batter.
Rinse them inside and out in a little water, remove the insides and the transparent rod that runs from the tail along the carcass (it acts as a spine). Boil a pot of water, the weight of the water should be 3 times more than the weight of the squid. Put the carcasses in boiling water, wait until the boil starts again, and immediately remove the pan from the stove, you do not need to cook them anymore. Let the seafood sit in the boiling water for 15 minutes, then remove and use for cooking.
