Seven delicious soups for vegetarians
Vegetarian cuisine can and should be delicious, satisfying and varied, even though there is no meat. Try the vegetarian soups according to our recipes and see for yourself.
Delicious chanterelles
Mushroom soups are the best alternative to soups without meat and fish, because they contain no less protein. Soak 300 g of chanterelles in water for 30 minutes. Meanwhile, cut 2 potatoes into slices, onion-half rings, and carrot-cubes. Fill the mushrooms with 2 liters of water and cook for 30 minutes. Then pour the potatoes to them and cook for another 7 minutes. At the same time, we make a roast of carrots and onions in olive oil. When they are browned, transfer them to the soup and cook for 10 minutes. Salt and pepper it to taste, put the bay leaf and ½ tsp mustard. The aroma of the soup will be amazing, and even meat eaters will not resist it.
Tomato delight
Vegetarians eat tomatoes with pleasure. So for cooking soup without meat, they are quite suitable, especially in combination with pearl barley. Fill a glass of cereals with 3 cups of water, add 1 tsp of salt and cook until softened. Pour out 200 g of white cabbage and potatoes to the pearl barley. Meanwhile, in a frying pan, fry a mixture of 2 carrots, 2 celery stalks, sweet pepper and zucchini. Here we put the crushed tomato and pour 2 cups of tomato juice. Simmer the mixture for 3 minutes and send it to a saucepan with soup. Add salt to taste, bring it to readiness. Serve this soup with a slice of lemon or orange.
Upbeat duo
Broccoli and Turkish peas-a combination created specifically for soups. Soak 250 g of chickpeas for 12 hours, then pour it in a saucepan with a liter of water and cook for an hour. When it softens, add 3 diced potatoes and 200 g of broccoli inflorescences. Heat a frying pan with vegetable oil, put in it ½ tsp. turmeric and cumin, passeruem carrots with 1 onion until golden brown. Add the roast to the pan with the vegetables and cook the soup for another 5 minutes. At the end, put salt and spices to taste, sprinkle with chopped herbs and cover with a lid. This soup will perfectly saturate and cheer up the whole family.
Vegetable salute
Gourmets can be pleased with one of the versions of minestrone-an exquisite vegetarian soup. In a saucepan, fry 2 cloves of chopped garlic. Pour out the diced carrots, 2 potatoes, zucchini, onion and celery stalk. Brown the vegetables and fill them with 1½ liters of water or vegetable broth. Cook them for 15 minutes, then lay 200 g of white canellini beans and continue to cook for another 5 minutes. Remove the minestrone from the heat, add 50 g of red pesto, 4 cherry tomatoes, cut into quarters, salt and spices to taste. We insist the soup for 10 minutes under a closed lid. It will be appreciated even by sophisticated vegetarians.
Pumpkin Sun
Autumn itself tells us what vegetable soups without meat to cook. After all, you can use pumpkin as the main ingredient. In a preheated saucepan with vegetable oil, put 2 potatoes and 300 g of pumpkin cubes. When they soften, sprinkle them with 1 tbsp flour, fry for 2 minutes and pour 1½ liters of vegetable broth. Cook the vegetables for 10 minutes, pour 150 g of canned corn and ½ cup of white beans into a saucepan. Add salt to taste and simmer the soup for another 5 minutes. Add a glass of sour cream and punch with a blender to a puree-like state, bring to a boil again and remove from the stove. To warm up with this soup in the cold is doubly delicious.
Beetroot tenderness
Beetroot soup can fill up the piggy bank of soup recipes for vegetarians. Boil 2 large beets and coarsely cut into cubes. In the same way, we cut 2 raw potatoes, an onion and a carrot, finely chop 300 g of cabbage. Add salt and pepper to the vegetable mixture, pour a liter of boiling water and cook until tender. Drain the broth, add the beetroot to the vegetables and pour them with lemon juice. So we will keep a bright, rich color. Using a blender, turn the vegetables into mashed potatoes and dilute it to the desired density with broth. Apple Surprise
Do you want to treat your family with something unusual? Prepare the apple soup. Fry 2 onions in a saucepan until golden brown. Add 8 coarsely chopped apples, 1 tsp curry and salt to taste. Choose the apple variety at your discretion, but the white filling is best suited here. Pour a liter of vegetable broth into a saucepan and cook the soup for 30 minutes from the moment of boiling. Then cool it, add the juice and zest of half a lemon, puree with a blender. Put the soup in the refrigerator for 2 hours. When serving, you can sprinkle the soup with spices to your taste.
