Cooking for one-two-three: ideas for a quick lunch

Sometimes it happens that there is no way to devote at least one hour to cooking dinner. So the housewives have to improvise, showing the wonders of culinary ingenuity and sleight of hand. What to do if there is very little time left, and the hungry household members are already frozen in agonizing anticipation near the kitchen? Salad with improvisation

Let’s start with a light, but very satisfying salad of freshly frozen Brussels sprouts “Planet of vitamins”. The abundance of fiber quickly creates a feeling of satiety and helps to properly assimilate a rich vitamin and mineral complex.

Boil 150 g of Brussels sprouts in salted water, cool and chop the tips in half. At the same time, we cook new potatoes and cut one avocado into cubes. 

We put the vegetables in a container, decorate the salad with spinach leaves and herbs. The original dressing will add sophistication to the dish, which we get by mixing 30 ml of apple cider vinegar, 60 ml of olive oil and 0.5 tsp of mustard.

Hawaiian-style casserole

A tricky vegetable casserole with rice is prepared in just 15-20 minutes, and everyone will remember it for a long time. The main secret ingredient here is the freshly frozen Hawaiian mixture “Planet of Vitamins”. It consists of green peas, corn, sweet red pepper and rice. A harmonious combination of slow carbohydrates and valuable dietary fiber in addition to protein is exactly what you need for a full lunch.

Heat a deep frying pan with vegetable oil, pour out 400 g of the Hawaiian mixture and, stirring occasionally, fry until softened. At the end, salt and pepper to taste. Separately, beat 3 eggs, 100 ml of milk, a pinch of salt and your favorite dry herbs. We transfer the vegetables with rice to a baking dish in an even layer, pour the egg mixture, sprinkle with grated cheese, spread the tomatoes cut into circles on top. We send the form to the oven preheated to 200 °C for about 15 minutes. And while the cheese crust has not had time to harden, rather treat your relatives with a colorful vegetable casserole.

Cauliflower in a spicy batter

If you have a freshly frozen cauliflower “Planet of vitamins”, then in the very near future there will be a hearty lunch. Just brown the inflorescences in a frying pan in the original batter. The active substances in the composition of this vegetable improve digestion and activate the metabolism. In addition, cauliflower with its generous supply of valuable elements is absorbed easily and in full.

Whisk 2 eggs, 6 tbsp. l. flour, a handful of finely chopped fresh parsley. For a bright spicy taste, you can add 1 tsp. paprika, ¼ tsp.curry and red pepper. Next, pour in 200 ml of mineral water at room temperature and mix well. In turn, we dip small inflorescences of cauliflower into the batter and quickly fry on all sides until golden brown. You can serve this dish with sour cream-garlic or hot tomato sauce. And if you want a Caucasian flavor, take the narsharab sauce.

Tender broccoli soup

Cooking a delicious and healthy soup in a hurry is also not a problem. With freshly frozen broccoli “Planet of vitamins” it will not be difficult. Thanks to the shock freezing, the vegetables retained their original texture, rich color and the entire supply of vitamins and minerals. Therefore, the broccoli cream soup will turn out to be tender, refined and extremely useful.

We pass a clove of crushed garlic and a head of chopped onion in a frying pan with olive oil until transparent. Pour out 400 g of small broccoli inflorescences, pour 500 ml of hot chicken or vegetable broth. Cook over medium heat until the cabbage is completely softened. Rub 100 g of melted cheese directly into the pan and immediately beat it with a blender into a homogeneous puree. Pour in a little warmed cream to the desired density, mix well and smoothly bring the soup to a boil over low heat. Traditionally, vegetable cream soups are served with garlic croutons or homemade breadcrumbs.

Rice in green tones

It is proved that green vegetables are powerful antioxidants and have a wide range of useful properties. Freshly frozen string beans and asparagus “Planet of Vitamins” are just one of them. To start, we boil 150 g of rice (if desired, rice can be replaced with couscous or bulgur, which must be poured with boiling water for 15 minutes). We cut 100 g of asparagus into oblique slices and, together with the same amount of string beans, lightly fry in a frying pan with oil. You can add a little fresh mint here for a subtle aroma and expressive refreshing notes.

As soon as the asparagus and beans have become quite soft, it’s time to mix them with ready-made rice. Before serving, sprinkle the dish with lemon juice and sprinkle with herbs.

Mexican Vegetable Carnival

A couple of tortilla cakes plus freshly frozen Mexican salad and spinach “Planet of Vitamins” – that’s all you need for a quick and delicious lunch.  The salad is made from green peas, corn, carrots, sweet peppers and string beans. A harmonious vegetable combination will be the perfect filling for a vegetarian version of a traditional Mexican quesadilla. And we will use fresh juicy spinach leaves for the sauce.

Put 400 g of spinach, a handful of pine nuts and a clove of garlic in the bowl of a blender. Whisk everything into a homogeneous mass, pour in 70 ml of olive oil, punch again. Then add 50 g of finely grated parmesan. Heat a frying pan with vegetable oil and fry 300 g of the Mexican mixture in it until all the vegetables are evenly browned.

Lubricate the round tortillas with spinach sauce, spread the vegetable filling on half of each, sprinkle with grated cheese and cover with the second half of the tortilla. Fry the quesadilla on both sides in a greased frying pan until golden brown and serve it to the table soon.
