Conveyor dishwashers – an overview

In the field of catering, it is difficult to do without a professional dishwasher. For businesses, there are several types of dishwashers that can meet the needs of a modern establishment. One of these PMMs is a conveyor-type dishwasher. Often it is compared with a tunnel machine, but there are still some differences in their design and principle of operation. We propose to consider the features of this type of machine and get acquainted with the model range, which is popular in Russia.

Conveyor dishwasher: features

Since the Soviet era, a conveyor dishwasher has practically not changed its principle of operation: it provides a continuous washing process. Choosing such a machine for your cafe or restaurant, you can be sure that it will wash a mountain of dishes and other kitchen utensils in a short period of time. In such a PMM, the dishes enter the conveyor belt, pulling the plates through several compartments at once: for washing, rinsing and drying (if provided in the design).

  • Washing. At this stage, the remains of food are washed off the dishes with hot water at 60 degrees. Water is sprayed onto the plates under strong pressure by special nozzles located on all sides of the washing hopper. Today’s models, unlike their Soviet counterparts, are equipped with nozzles that supply the flow of water in the same direction as the dishes in the conveyor. This effect prolongs the contact of the dishes with the water jet.
  • Rinsing. The temperature in this compartment is 90 degrees – well-heated water provides complete disinfection of cutlery and plates, destroying up to 90% of harmful microorganisms.

Important! After such washing and rinsing, the dishes are 100% compliant with the declared sanitary standards, which cannot be achieved manually.

During the rinsing of dishes, special rinse aids are used, which speed up the drying process, prevent the appearance of streaks and smudges. The rinsing stage can be divided into several cycles or be a single one. With a simple rinse, the treatment occurs once, with a complex rinse, the dishes are first rinsed with hot water to rinse off the detergent, after which they are treated with rinse aid dissolved in cold water, and then with crystal clear hot water.

Some models of conveyor PMM are equipped with an additional hopper for pre-rinsing. In especially “cool” cars, there are steam condensers that capture the steam that forms when washing with water of different temperatures.

Types, advantages and disadvantages of conveyor machines

There are two types of dishwashers that work on the conveyor principle:

  1. Tape. In them, baskets fall on a tape equipped with “fingers”. In this case, two operators are needed, one of which will load the dishes, the second will collect them. These machines are often installed in large canteens, sanatoriums and boarding houses – where there are a lot of dishes of the same shape. Their difference is a direct shape and large dimensions.
  2. Cassette. The plates are shuffled into cassettes, after which they are loaded into the PMM. These are more compact machines that require only one operator. But there are two disadvantages: the low intensity of washing, which is interfered with by the cassettes, and the rapid wear of the dish baskets.

Important! Cassette type conveyor machines are popular in restaurants or canteens with a wide variety of tableware.

Regardless of the type of PMM, its design provides for trays for cutlery and other utensils.

Productivity is the main advantage of this technique. And the main disadvantages of conveyor machines are:

  • costly – require a lot of water and electricity;
  • are connected to a three-phase network of 380 V, therefore, they require the re-equipment of the electrical network in the room.

It has an impressive weight of 355 kg and requires connection to a three-phase network. It can wash from 69 to 108 baskets per hour. The washing tank is designed for 70 liters of water, and the boiler – for 24 liters. Washing takes place at a water temperature of 55 degrees.
