Communities and Central Kitchens in their III Congress

The most select of collective catering will meet next week in Madrid to celebrate its 3rd convention.

The ANTA association, which groups and collaborates with the main collective catering operators in our country, is the organizer of the event, and this will be the III Edition, returning to the capital of Spain after the previous meetings in Madrid and Barcelona respectively.

The date will be next April 12, and the chosen place is the kitchen classroom of the School of Hospitality and Tourism of Casa de Campo.

As part of its philosophy of helping innovation and development of ideas in the field of cuisine and restoration, the conference will be developed with various themes, where we highlight the two sessions where they will work on the application of high pressure in cooked dishes and the one developed with MicVac technology, for pasteurization inside the container.

At the same time, the InnovANTA and EXCEL45 award ceremonies will be held for the winners of this 2016 edition and the tribute to several pioneering central kitchens in the 90’s of the so-called V-range concept and the first developments of the delayed or assembly kitchen.

The innovations of the Central Kitchens Convention

The virtue in the large-scale elaboration and the maintenance and conservation of food without altering its sensory quality and guaranteeing food safety, is the cornerstone of the latest and no less effective programs carried out by the different factories and brands in the field of collective catering.

The evolution of the concepts is supported by specialized machinery, and the staging goes from microwave ovens to catering ovens to reach vacuum ovens.

Returning to the theme of the Awards, this year the awards will value the activity of those companies in the field of production in the fields of innovation, commercial promotion, technology and sustainability.

The winners of this VI edition of the InnovAnta Awards:

  • Salycop, specialist in quality prepared dishes for the hospitality industry.
  • Healthy Dining Room and School Restoration, in the joint sustainability project.
  • Prezo.es for its new purchasing management platform.
  • Dr. Olga Martín-Belloso, for her research on product development and technological applications.

Regarding the IV Excel Awards45, the awards are for:

  • Serunion in San Fernando de Henares
  • Aramark in Seville
  • Miplato, in Córdoba.
