Method of preparation

Beets, carrots are cut into cubes or strips and simmered (beets are simmered with vinegar), vegetables are cooled and put in kvass. Young beets are used together with tops, which are cut and boiled separately. Beetroot can be cooked without carrots, while the rate of beets increases accordingly. Let go of the beetroot, as indicated in the rec. No. 191.
