The Kakheti method is based on the preservation of wine and machara (young wine, in which the fermentation process has barely completed). For this, only special earthenware, called Qvevri, is used. It is made only from baked clay using a special technology.

The finished wine is poured directly into the pre-treated qvevri, after which it is buried in the ground. Thanks to this, the optimal temperature of the finished drink is maintained in the vessel. The main component of winemaking in Georgia is Qvevri. Dishes, which give the wine a special taste, saturate it with useful properties.

Old Kakheti is a fairly strong drink with honored customs and traditions of the Kakhetians, which has passed strict quality control. This product is produced from Rkatsiteli grapes.

Acquiring exposure, the product is saturated with a tart taste and acquires a long aftertaste. A strong drink acquires an amber color and the presence of vanilla-nut notes, which will impress a true connoisseur.

After obtaining high-quality cognac spirit, it is poured and left to age in special oak barrels – barriques.

Types of cognac Old Kakheti

Cognac Old Kakheti is produced in a volume of 0.5 liters and has a strength of 40% in several versions, depending on the exposure:

  1. 4 years

    Like most types of cognac, it is made from high quality wine materials.

    Ready cognac is stored in oak barrels. Cognac alcohol is produced from the type of grape “Rkatsiteli”, and stand for at least 4 years.

    The drink has a rich, harmonious, pronounced deep aroma of fruit notes. The drink has a bright wheat color.

  2. 5 years

    Produced from a blend of cognac spirit, which is aged for more than 5 years, in oak barrels.

    The Rkatsiteli grape variety is used as the main raw material for the production of this wonderful nectar.

    It has a pleasant aroma with fruity notes and rich taste. Has a straw color.

  3. 7 years

    Cognac, consists of cognac spirits based on Rkatsiteli grapes.

    It has been aged in oak barrels for over 7 years. The drink has a wheaten hue.

    It is characterized by a bright taste with a light aroma of grapes.

  4. 10 years

    The composition of this cognac includes spirits, the age of which is more than 10 years. They are stored in oak barrels.

    The raw material is obtained from the Rkatsiteli grape variety. The drink has a pleasant aroma with a fruity bouquet.

    It has wheat color and soft intense taste.

  5. 17 years

    Cognac is made from the Rkatsiteli grape variety and cognac spirits aged for more than 17 years.

    Cognac has an amber hue with a hint of gold.

    On the palate, there are notes of oak and fragrant grapes, it has a chocolate aftertaste.

How to distinguish cognac Old Kakheti from a fake

  1. The bottling of Old Kakheti cognac is carried out exclusively in narrow and elongated bottles with a concave bottom.

  2. On the bottle above the label there is an extrusion in Georgian, and below under the inscription there is a similar extrusion only in Russian.

  3. A sealed container with only an oak cork framed in plastic. The presence of traces of glue on the bottle is not allowed, while the cork must be without signs of deformation.

  4. Alcohol has a light thick consistency, which you can check by shaking the bottle, a few drops will drain longer. This is due to the fact that cognac is made from high-quality spirits infused in oak barrels. There should be no sediment at the bottom of the container.

With what to drink cognac Old Kakheti

Strong alcohol goes well with cheese, caviar and a good cigar. However, heavy snacks will not allow you to fully enjoy this drink.

To feel the exquisite bouquet of this cognac, it is recommended to drink it at a temperature of 20 degrees Celsius. This drink is ideally combined with baked meat, fruits, seafood and hard cheese.
