Cognac Latgalian: what is it + recipe at home

What you need to know

It’s worth starting with the fact that the name “cognac” is very arbitrary, because real cognac is made in France from grape spirits. Drinks based on grape distillates from other countries are commonly called brandy. We are dealing with a tincture that is similar in organoleptic properties to the French original. The recipe was invented by Latgalian distillers.

Latgale is a region in the eastern part of Latvia. It is interesting because historically it had its own language, culture and even religion. The Latgalians were a separate people from the Latvians.

Oak bark can be purchased at a pharmacy, but the best option is to cut it from a tree. The taste of the drink varies depending on what time of the year you cut the bark. Before you do anything with it, you need to rinse it under running water and scald it with boiling water: this will make it tastier.

Ingredients

  1. Moonshine, 50% – 3 l

  2. Oak bark (sticks, medium roast chips) – 2 tablespoons

  3. Sugar – 3 tablespoons

  4. Carnation – 3-4 buds

  5. Ground nutmeg – 0,5 g

  6. Ground coriander – on the tip of a knife

Method of preparation

  1. Place the dry ingredients in a jar of distillate.

  2. Leave the jar to infuse in a dark, warm place for a week.

  3. Try a drink. Leave it alone for a while if necessary. The maximum period is a month, so as not to be bitter from oak.

  4. Before use, strain the tincture through a cotton filter.
