From whitecurrant you can make a very fine wine. It is somewhat reminiscent of expensive nutmeg varieties, but with an original flavor. Such a drink will help quench your thirst, cheer you up and improve the functioning of the body. The process of making such a wine is not much different from the traditional one, but it has some nuances that you should pay attention to. Let’s start.
Ingredients:
- White currant – 2 kg;
- Water – 3 l;
- Sugar – 1 kg.
A step-by-step recipe for homemade whitecurrant wine
Step 1: Get rid of leaves, twigs and other debris. This must be done very carefully, otherwise an unpleasant aftertaste may appear in the finished drink.
Step 2: Crush the berries with a spoon or your hands. You can also walk on them with a wooden rolling pin or process them with a blender.
Step 3: Boil or purify the water beforehand. Use one liter to pour currants. Add 400 g of sugar to the workpiece, mix.
Step 4: Pour the berry mixture into a deep bottle. Her neck must be tied with gauze. Leave the future wine in a dark place for 2 days. Every 10 hours you need to stir the liquid with your hands to drown the floating pulp.
Step 5: When the wort begins to ferment, strain it through cheesecloth and squeeze. Return the juice to the bottle.
Step 6: Heat the remaining water almost to a boil. Mix it with currant cake, mix and cool. After that, you need to strain the mixture through cheesecloth, add to the juice.
Step 7: The wine bottle should be filled to a maximum of 75%. If necessary, pour the liquid into another container. Then install a water seal or medical glove on it. In the latter, you need to make a small hole on your finger.
Step 8: Leave the workpiece warm for 4 days. After that, remove the glove, drain 0.5 l of liquid and dissolve 300 g of sugar in it. Return the mixture to the bottle, reinstall the water seal.
Step 9: After 4 days, add the remaining sugar to the wort. You need to do this using the method described in the previous step. The wine must ferment for another 1.5 months, after which it will be possible to bottle it. Try not to touch the sediment. Wine can be stored in a cellar or refrigerator for up to 3 years.
Important features
In no case do not use rotten or moldy currants! If there are unripe berries on the clusters, spread them in the sun. In a couple of days it will be possible to start making wine. Be sure to sterilize all containers, but currants can not be washed. Due to this, wild yeast will remain on the fruits, accelerating the fermentation process.
