Tsimlyanskoye is a sparkling wine produced by the Rostov Champagne Factory. The history of the drink dates back to the XNUMXth century, when the first wineries appeared on the Don. Local champagne was not much inferior to other European brands and was highly valued by the Russian nobility for its taste.

Historical information

Tsimlyansk wine got its name from the village of Ust-Tsimla, founded by the Don Cossacks. The development of viticulture in the region was promoted by Peter I, who ordered seedlings from France, over time they began to give good harvests. The sparkling wine factory was built in the city of Tsimlyansk in 1966 near the reservoir. The company grew raw materials in its own vineyards, including varieties bred specifically for the region: Krasnostop, Tsimlyansky Black and Plechistik.

In 2001, Tsimlyansk Wines was transformed into an open joint stock company and for a long time was one of the leaders in the industry. Up to 5 million tons of raw materials were harvested annually in the vineyards, and two million bottles of champagne came off the bottling lines annually. Production was carried out according to classical technology, which made it possible to obtain high quality sparkling wines.

In mid-2018, the company stopped its work due to bankruptcy proceedings, and the license for the production of brands was transferred to the Rostov plant. The plant has been operating since 1936, equipped with modern equipment and produces sparkling wines by continuous and reservoir methods. Raw materials come from the Don vineyards.

Interesting fact

The Don Cossacks made sparkling wine from the local varieties of grapes “Plechistik” and “Tsimlyansky black”. Harvested no earlier than October – by this time the berries withered a little and acquired the desired sweetness. After the primary fermentation, the must was poured into barrels and left until spring. Then the wine fermented in bottles, which were placed in pits specially dug for this purpose. After aging, the drink acquired a strength slightly above 9% and was saturated with carbon dioxide.

Golden wine created from five grape varieties. The aroma is dominated by peach and pear with floral undertones. Champagne is easy to drink, despite the presence of fruity sourness and barely noticeable astringency at the finish.

Champagne rich golden color, mineralization is not too strong. In the aromatic bouquet shades of pear, apple and apricot are guessed. The taste is harmonious and refreshing, dominated by floral and fruity notes.

Wine of a light straw color with sunny highlights. The fresh aroma is dominated by meadow flowers. Perlage is persistent and long lasting. The taste is delicate with a good balance of sweetness and acidity.

It is bottled in dark glass bottles. The aroma reveals the smells of fresh grapes and meadow flowers. The taste harmoniously combines fruity sweetness and berry sourness.
