Be gluten intolerant

Cécile Gleize, creator of the information site for people with gluten intolerance, explains: “almost 1 to 2% of the population is gluten intolerant, that is to say that these people are carriers of the so-called celiac disease ”. In practice, this is a chronic bowel disease triggered by the consumption of gluten, a mixture of proteins contained in certain cereals (wheat, barley, rye). Another category of people (6%) is said to be gluten sensitive, that is, it does not digest gluten but does not develop disease. These people feel bloated most often after a meal.

Gluten is found in the seeds of several grains: wheat, barley, oats and rye. Many foods contain it such as bread, cookies, pasta and some processed products. “In order to anticipate allergies linked to meals cooked or ordered from a traditional caterer, the ideal is to cook everything yourself”, explains Cécile Gleize. The main Christmas dishes can also be served without problem, she said. “Foie gras, seafood, poultry, capon, turkey… these are foods that have no grain products”. In the end, it is mainly the desserts who are concerned. 

Cooking gluten-free during the holidays

To keep everyone happy, it is best to cook healthily for children or adults, whether or not they are gluten intolerant. Blinis, chips, pies, pizzas, logs, pasta, quiches, savory cakes, cookies and cakes : everything is possible with gluten-free flour. ” Thanks to alternative flours, it is possible to make really good cakes! It suffices to substitute the classic flours with those containing rice, corn or buckwheat ”. Same mechanics for cakes and cakes. For bread, it is more advisable to use buckwheat flour.
