First you need to separate the whites from the yolks. Beat the whites with a mixer for at least ten minutes – until a fairly thick, persistent foam is formed. This must be done only in a completely clean dish without traces of fat. If the whites do not whip well, then they need to be cooled. Then slowly add half of the sugar, while continuing to beat. Proteins should expand dramatically.
