Most harmful to brain health is the substance acrylamide, which in the process of processing acquires a number of carcinogenic and mutagenic properties.

We remind you that acrylamide is present not only in thinly fried potatoes, but in chocolate, almonds, individual cereals, crackers and even bread. True, its amount in these products is minimal. Therefore, doctors are in no hurry to class them as toxic and dangerous to the health of adults and children.
