Chicken meat is perhaps the most popular. Democratic in price, dietary and tasty – it is a frequent guest at our tables. Chicken makes excellent soups and broths, excellent pilaf, it can be baked in the oven, stewed, fried in a pan and grilled. Or you can prepare original rolls that will decorate both the everyday menu and the festive table.
Chicken roll – recipes and cooking principles
Rolls are made from minced chicken or a whole piece of meat. Usually, chicken breasts, legs and a whole carcass are used for rolls. If the dish is prepared from fillets or breasts, they are simply beaten off with a wooden mallet to the same thickness, then salted, sprinkled with pepper and spices, the filling is laid out and rolled up. To prevent the meat from unfolding, it is fastened with wooden skewers or wrapped with threads.
If the roll is made from a whole carcass or legs, first of all, using a sharp knife, the meat is freed from bones and tendons. Then the resulting layer of chicken is laid out on the desktop skin down, slightly beaten off, seasoned with salt, pepper and spices, the filling is laid out and the chicken meat is rolled up. It is then tied with a thread, wrapped in foil or film. The roll prepared in this way can be baked in the oven or boiled in broth or water with the addition of spices and vegetables.
A roll of minced meat is usually formed on a film, napkin or foil, on which a layer of minced meat is laid out, a filling is placed on it, and another layer of minced meat on top, then, carefully lifting the edges of the film or foil, a chicken roll is formed.
Chicken roll in dough
One of the options for a tender and juicy roll is chicken roll in dough. To prepare it, you will need: – 3 chicken breasts; – 500 g of lean pork belly; – 500 g of mushrooms; – 500 g of puff pastry; – 2 eggs; – 6-7 tbsp. sour cream; – spices; – pepper; – salt.
First of all, wash, dry the pork brisket and twist it through a meat grinder, salt, pepper and add 4 tablespoons of sour cream, mix everything thoroughly. Then cut the chicken fillet into large thin slices, beat well, sprinkle with spices, salt and pepper.
To prevent chicken meat from scattering in different directions during beating, it should be beaten through a plastic bag or cling film
Place the prepared fillets on cling film overlapping each other, thus laying out a rectangular layer. Spread the minced pork on top and very carefully use the film to roll the layer into a roll.
Wash the mushrooms, peel and bake in the oven at 220 ° C for 20-25 minutes. During this time, the mushrooms should dry up well and give a strong aroma, but not burn. Then pass the baked champignons through a meat grinder, add 2-3 tablespoons of sour cream, 1 whipped face, salt, pepper and mix everything well.
Lay parchment on your work surface, spread the puff pastry on it and roll it into a thin layer. In the middle, line half of the cooked mushroom meat in a strip. Lay the chicken roll on top and coat it with the remaining minced mushroom on all sides. Then wrap the roll with dough, pinch the edges, and cut off the excess dough.
Lubricate the surface of the chicken roll in the dough with a beaten egg, pierce in several places with a fork so that steam can escape during baking, and gently transfer the roll to a greased baking sheet. Then place it in an oven preheated to 220 ° C for 15 minutes. As soon as the surface of the roll turns brown, reduce the heating temperature to 180 ° C, cover the roll with foil and bake for another 40 minutes.
Put the finished chicken roll on a dish and cover with a towel. Serve it warm, cut into portions.
Chicken roll in foil
Poultry lovers can make minced chicken roll. It is baked in foil, so it turns out very juicy. To make a chicken roll in foil, you need to take: – 1 kg of minced chicken; – 3 tbsp. sour cream; – 2 eggs; – 1-2 carrots; – a bunch of green onions; – vegetable oil; – salt; – pepper; – seasonings for chicken.
You can make minced meat for a roll yourself, or you can buy it in a store. Beat eggs into the minced meat, add sour cream, chicken spices, salt and pepper and knead the minced meat well.
Wash green onions, dry and chop finely. Peel and grate the carrots. Then fry the green onions with the carrots in a pan with vegetable oil.
This chicken roll can greatly diversify the menu thanks to the various fillings. It can be made with chopped boiled eggs and herbs, spinach, mushrooms, ham and cheese, etc.
Spread baking foil in two layers on the work surface and put half of the minced chicken on it, flatten it and give the minced meat an oval shape. Spread the prepared green onion and carrot filling on top and cover it with the remaining minced chicken, forming the desired roll shape. The whole filling should be, as it were, wrapped in minced chicken on all sides. Then carefully wrap the chicken roll in foil and place in the oven heated to 180 ° C for 20 minutes. Then take out the roll, remove the foil and place back in the oven to bake until a delicious crust forms.
This recipe chicken roll can be served hot or cold.
