If you love chicken legs, you can cook them in a variety of ways: boil, fry, bake in the oven or over charcoal. In order not only to preserve the natural aroma of the bird, but also to shade it with the help of spices, the legs can be marinated before frying or baking.
How to marinate chicken legs correctly
For frying or baking, use both whole chicken legs and parts of chicken legs – drumsticks or thighs. It is not necessary to remove the skin from them, it will protect the meat during frying, the fat melted out of it will make it softer and softer. It is best to marinate chicken legs a few hours before cooking and keep them in the marinade at room temperature for at least an hour.
Do not use vinegar for the preparation of the marinade – it will give the meat a specific taste and make its fibers hard and tasteless
Hot marinade for making chicken leg shashlik
Chicken legs are often cooked at home – they are affordable, tasty and fried faster than pork, lamb or beef. Try marinating the legs in hot brine with spices and roots.
For such a marinade, you will need:
- chicken legs – 1 kg
- l water 1
- juice of half a lemon
- carrots – 2 pcs.
- celery root – ½ pc.
- parsley root – ½ pc.
- onions – 2-3 pcs.
- bay leaf – 2-3 pcs.
- ground coriander and nutmeg – ½ tsp each.
- ground black pepper
- garlic – 3-4 cloves
- salt – 1 tablespoon
Peel the onions and carrots, cut the onions into large half rings, chop the carrots into not very thin strips. Cut the celery root into slices, parsley into circles. Boil water, salt it, put carrots, bay leaves, roots and spices in boiling water, continue to boil for another 5 minutes, then turn off the water and add coarsely chopped onions and garlic to it. Remove the pan from heat, pour the lemon juice into the marinade, mix everything and pour the meat with this hot marinade. Place a lid on the container and wrap it in a warm blanket to let the meat sit in the hot marinade and soak in its aroma. Frying such meat on coals will not take long.
Chicken meat is delicious on its own, so try not to overuse spices when cooking or pickling it.
Quick marinade for chicken legs
Ingredients:
- chicken legs – 1 kg
- chopped garlic – 3-4 cloves
- soy sauce – 4 tablespoons
- olive oil – 2 tablespoon
- ground black pepper
If you want to quickly fry or bake the legs, you can marinate them in a mixture of minced garlic, soy sauce and olive oil for half an hour. Combine these ingredients and add chopped garlic, some herbs or fresh herbs to the marinade.
Marinade for chicken legs with yogurt
For this delicious marinade for 1 kg of legs, you will need:
- unsweetened yogurt – 125 g
- lemon juice – 2 tsp
- curry powder – on the tip of a knife
- ground black pepper
- salt
Stir all the ingredients and coat each piece of meat with marinade.
