Chicken fricassee: recipe. Video
The taste of Spanish cuisine is a natural reflection of the passionate nature of this nation. Local chefs know how, by combining various spices, to ennoble the taste of an ordinary product so much that you will never guess which ingredient is taken as the basis. A simple chicken fricassee recipe will allow you to get an unusual dish.
Required ingredients: – 1 medium sized young chicken; – 4 tbsp. l. butter; – 1 tbsp. l. wheat flour.
For scented sauce: – a pinch of salt, – 1 tsp. chopped black and red peppers; – a pinch of rosemary; – 1 glass of white dessert wine; – 1 glass of broth; – 1 bay leaf; – 1 clove of garlic; – parsley, – juice of half a lemon; – 50 g sour cream or cream; – 2 egg yolks.
To make chicken fricassee, take the back of the chicken, chop it into small pieces, and from the front you can cook the broth, which will later be used for the sauce. Dip each bite in a dry salt, pepper and rosemary mixture.
The Spaniards serve fricassee along with hot sauce and bran bread. The bread is then dipped in this sauce
Lightly fry the fragrant chicken pieces in a preheated pan, having previously melted a little butter on it. Sprinkle the hot product with flour and fry for a few more minutes. Next, mix the fillet with liquid ingredients: wine, broth, add a whole clove of garlic, sprigs of herbs and bay leaf. The dish is ready for cooking in the oven, cover the pan with a lid and bake for 50 minutes at a moderate temperature.
Remove the chicken from the oven and add sour cream and lemon juice to the remaining sauce on the baking sheet. Bay leaves, garlic and herbs can be thrown away as unnecessary. To prevent the yolks from curdling from the hot solution, add them last, whisking the resulting mass with a whisk. Boil the sauce additionally over low heat for 5 minutes. To nourish the chicken pieces with a delicious sauce, place them in the same container and boil a little more. Delicate fricassee can be served with boiled rice, pouring the rest of the aromatic sauce over the dish.
Saffron is used to give the chicken a beautiful golden color.
Fricassee: recipe for chicken with mushrooms
In this recipe, the same ingredients are suitable, only to them you also need to add: – 1 can of canned champignons – 200 g; – 1 pinch of thyme; – 1 onion; – 1 boiled egg.
You need to cook the dish in the same way as the previous one, only mushrooms, onions and thyme need to be added to the dish at the end, when baked in the oven. Garnish the fricassee with mushrooms, parsley, and a boiled egg. This original delicacy does not take very long to prepare and is ideal for a romantic dinner. The whole cooking time will take no more than an hour.
