Chicken is one of the most popular foods on the planet. Different nations, in different culinary traditions, with a different set of spices and ingredients, guided by different culinary techniques, have invented hundreds of chicken dishes, but even the best housewives sometimes feel that their imagination has run dry.
Chicken is often perceived as a hot dish, and you can make many snacks from it, for example, wrapping it in a tortilla along with guacomole. To prepare this dish, apart from one chicken breast, you will need: – 2 avocados; – 1 lemon; – ½ head of red onion; – 2 tablespoons of cilantro greens; – 1 hot jalapeno pepper; – 2 tortillas.

Rinse the breast under running water, pat dry with a paper towel and fry for 5-7 minutes on each side in a hot grill pan. Set aside to cool. Place the lemon in the microwave for 2-3 minutes to squeeze out as much juice as possible. Squeeze out the citrus. Cut the avocado in half and remove the pit, remove the skin, chop the pulp and put in the blender bowl, pour with lemon juice. Peel the onions and cut into small cubes, add to the avocado along with the cilantro.
Free the jalapeno pepper from the stalk and thoroughly clean the seeds (they contain the most capsaicin, which is responsible for the sharpness of the pepper). If you like it hot, you can leave some of the seeds. Coarsely chop the jalapenos and place in the blender bowl. Tear the cooled chicken into small pieces and add to the rest of the ingredients. Pulse everything. You shouldn’t aim for a very smooth texture, it is unlikely to be to your taste. Place the guacomole in the tortillas, roll them up, slice them in half, and serve.
Chicken Salad
Chicken salads are a common dish and rarely stir up imagination, but it is worth adding unusual ingredients to the appetizer, and the dish can pleasantly surprise you with a new, original taste. This salad can be made from chicken and grapes. Take: – 2 boiled chicken breasts; – 1 stalk of celery; – 4 feathers of green onions; – 1 ½ teaspoon of finely chopped fresh dill; – 2 tablespoons of finely chopped parsley; – 2 bunches of boneless large black grapes; – ¼ cup toasted almonds; – 1 glass of homemade mayonnaise; – 2 teaspoons of freshly squeezed lemon juice; – 1 teaspoon of Dijon mustard; – 2 teaspoons of finely ground salt; – freshly ground black pepper.
Cut the chicken breasts into 2 cm cubes. Peel the celery and cut into slices no wider than 0,5 centimeters. Cut the green onions diagonally and cut the grapes in half. In a small bowl, whisk the mayonnaise, mustard, lemon juice into a smooth sauce and season with salt and pepper. Place the chicken in a salad bowl, add celery, grapes, onions and season with the sauce. Stir and refrigerate the salad for 1-2 hours. Serve the chilled snack on the leaves of a fresh green frisse salad or on rye toast.

You can cook delicious chicken according to the standard recipe, and show your imagination by decorating the dish. Try making chicken rolls with zucchini and goat cheese. You will need: – 2 raw chicken breasts without skin and bones; – 4 zucchini; 1/4 cup olive oil – 2 tablespoons of curry powder; 1/2 teaspoon cayenne pepper – 2 minced garlic cloves; – 1 teaspoon of grated fresh ginger; – 1/4 teaspoon of salt; – 1/2 teaspoon of ground black pepper; – 120 g of fresh goat cheese.
At least 30 minutes before cooking kebabs, skewers, if they are bamboo and not iron, soak in plain water. This will keep them from charring.
For the marinade, combine 3 tablespoons olive oil, curry powder, cayenne and black pepper, garlic, ginger, and salt in a wide bowl. Cut the chicken fillet into cubes with sides 3-4 centimeters. Add the chicken to the marinade and mix well, making sure the mixture completely covers each bite. Cover the bowl with cling film and set aside. Cut the zucchini into thin slices lengthwise; it is most convenient to do this with an ordinary vegetable peeler. Brush with olive oil, season with salt and pepper and set aside. Preheat your grill. Skewer the chicken skewers and cook for 3-4 minutes on each side. Remove the chicken from the skewers, place on a serving dish and cover with cling foil. Fry the courgette slices until lightly tanned. Place a piece of chicken on each ready-made zucchini tongue, top with a little goat cheese and roll the zucchini into a roll. Place each roll on a serving dish seam side down and secure the entire structure with a snack skewer or ordinary toothpick. You can accompany this dish with a thick yogurt sauce with chopped garlic and parsley.
